Shanghai-Style Shrimp with Leeks

Ingredients
- 1 lb. medium shrimp
- 1 Tbs salt
- 1 1/2 Tbs. peanut oil
- 3 slices fresh, peeled ginger
- 3 crushed garlic cloves
- 1 cup shredded leeks
- 1 tsp. sugar
- 1 Tbs rice wine
- 1 tsp. salt
- 1/4 cup rich chicken stock
- 1 tsp. black vinegar
- 2 tsp. sesame oil

Step 1
Devein 1 lb. medium shrimp place in bowl of water with 1 Tbs salt. Wash and drain; repeat with fresh water and salt. Drain. rinse and pat dry. Heat wok until hot and add 1 1/2 Tbs. peanut oil. To flavor oil, add 3 slices fresh, peeled ginger and 3 crushed. garlic cloves. Stir-fry for 30 seconds and discard. Add shrimp and stir-fry for 1 min.; remove With slotted spoon and drain on paper towels. Wipe wok clean and reheat over high heat. Add 1 Tbs.
peanut oil and 1 cup shredded leeks (white part only). Stir-fry for 2 min. and then add 1 tsp. sugar. 1Tbs rice wine. 1 tsp. salt. 1/4 cup rich chicken stock, 1 tsp. black vinegar and 2 tsp. sesame oil. Return shrimp to wok and stir several times. Serve 4-6
