Poor Folks Maple Syrup

Boil sugar and water until sugar completely disolved
- 2 1/2 c. sugar
- 1 1/2 c. water
- maple flavoring
Grilled Potato Salad With Blue Cheese Vinaigrette

Combine vinegar, shallot, and mustard in medium bowl
- 1/4 cup Sherry wine vinegar
- 1 large shallot chopped
- 2 teaspoons Dijon mustard
- 1/2 cup olive oil
- 1/2 cup crumbled blue cheese
- 12 medium red-skinned potatoes - (abt 2 3/4 lbs) unpeeled
- Additional olive oil as needed
- 2 bunches watercress stems trimmed
- 3 green onions chopped

- 1 red onion diced
- 3/4 cup mayonnaise - (to 1)
- 2 tablespoons cider vinegar
- Salt to taste
- Freshly-ground black pepper to taste

- 1/3 cup heavy cream
- 12 oz. semi-sweet chocolate (cut into very small pieces) or 2 cups semi-sweet chocolate chips
- 6 tablespoons unsalted butter (cut into small pieces)
- 2 tablespoons Butter Vanilla, Rum, or Coconut Bakery Emulsion (your choice)
- Optional coating Chopped pecans, toasted coconut, chocolate ganache or cocoa powder

- 1/2 cup chopped pancetta (about 2 ounces)
