Separate 1 dozen eggs. Partially beat egg whites and add cream of tartar
- 1 dozen eggs
- 1-1/2 tsp cream of tartar
- 1/2 pound powdered sugar
- 3/4 tsp cinnamon
- 1/2 tsp ground cloves
- 1 - 1/2 tsps Allspice
- 3 whiskey glasses of liquor

HEARTY BACKYARD BURGERS

In a large bowl, combine the first six ingredients
- 1/2 cup finely chopped onion
- 1/4 cup beer or nonalcoholic beer
- 1 tablespoon Worcestershire sauce
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 pounds lean ground beef (90% lean)
- 6 rye rolls or whole wheat hamburger buns, split
- 6 lettuce leaves
- 12 tomato slices
ONE SKILLET SPAGHETTI FOR 2

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1/2 pound lean ground beef (90% lean)
- 1 small onion, chopped
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1/3 cup chopped green pepper
- 4 to 6 tablespoons water
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 3 ounces uncooked spaghetti, broken
- 1/3 cup shredded cheddar cheese
PULLED BBQ PORK

In a large skillet, saute onions in oil until tender
- 2 medium onions, finely chopped
- 1 tablespoon canola oil
- 6 garlic cloves, minced
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon pepper
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1/4 cup packed brown sugar
- 1/4 cup cider vinegar
- 2 tablespoons hot pepper sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground cumin
- 1 boneless pork shoulder butt roast (3 to 4 pounds)
- 8 kaiser rolls, split
ALMOND COLESLAW

Place coleslaw mix in a serving bowl
- 2 packages (16 ounces each) coleslaw mix
- 1 cup reduced-fat mayonnaise
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- 3/4 teaspoon lemon herb seasoning
- 1/2 teaspoon pepper
- 1/2 cup slivered almonds, toasted
COUNTRY FRIED CHICKEN

Allow chicken to brown at least one minute, then turn and brown on the other side
- Never salt and pepper chicken before frying. Season chicken after removing from skillet.
- Combine 1 egg and 1 T. water. Beat lightly. Place chicken in egg mixture to sit while you are heating the skillet.
- Use just enough oil so when the chicken is placed in the skillet, oil does not come up over halfway on the pieces. Make sure oil is very hot.
- Put a generous amount of flour into a paper bag. Place chicken pieces in sack and shake vigorously, holding top securely. Place in skillet.
OATMEAL-WALNUT COOKIES

Preheat oven to 350 degrees
- ½ cup granulated sugar
- 1/3 cup packed dark brown sugar
- ¼ cup butter, softened
- 1 tsp vanilla extract
- 1 large egg
- ¾ cup all-purpose flour
- 1 cup regular oats
- ¼ tsp salt
- 2/3 cup golden raisins
- ¼ cup chopped toasted walnuts
- Cooking spray
MAPLE SUGAR PUMPKIN PIE

In a bowl, combine the first 10 ingredients
- 1 can (15 ounces) solid-pack pumpkin
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 tablespoon butter, softened
- 1 cup sugar
- 1 cup milk
- 2 tablespoons maple syrup
- 2 eggs
- 1 unbaked pie shell (9 inches)
- Whipped cream, optional
BLUE CHEESE DIP

Sprinkle salt over garlic and chop, occasionally smearing mixture with blade of knife, until paste forms
