Allow chicken to brown at least one minute, then turn and brown on the other side

  • Never salt and pepper chicken before frying. Season chicken after removing from skillet.
  • Combine 1 egg and 1 T. water. Beat lightly. Place chicken in egg mixture to sit while you are heating the skillet.
  • Use just enough oil so when the chicken is placed in the skillet, oil does not come up over halfway on the pieces. Make sure oil is very hot.
  • Put a generous amount of flour into a paper bag. Place chicken pieces in sack and shake vigorously, holding top securely. Place in skillet.
