Paula Dean's Broccoli Salad

Trim off the large leaves from the broccoli stem
- 1 head broccoli
- 6 to 8 slices cooked bacon, crumbled
- 1/2 cup chopped red onion
- 1/2 cup raisins, optional
- 8 ounces sharp Cheddar, cut into very small chunks
- 1 cup mayonnaise
- 2 tablespoons white vinegar
- 1/4 cup sugar
- 1/2 cup halved cherry tomatoes
- Salt and freshly ground black pepper
Chili's Chili

Chili's Chili is a copycat recipe for the chili served in Chili's Restaurants
- 2 lbs. ground sirloin
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 (8-oz) can tomato sauce
- 1 cup tomato soup (optional)
- 1 cup water
- 3 Tbs. chili powder
- 1 Tbs. salt
- 1 Tbs. paprika
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. cumin
- 1/4 tsp. cayenne
- 1/4 to 1/3 cup masa flour mixed with about 1/2 cup water (do NOT use cornmeal! Masa is available in most supermarkets or in Latin groceries.)
Julia Child's French Chocolate Mousse

This is absolutely the queen of chocolate mousses
- For the first step, melting the chocolate:
- 1 cup semisweet chocolate bits
- 4 tbl strong coffee
- For the second step, the egg yolks and sugar:
- 4 egg yolks
- 3/4 cup granulated extra fine sugar
- 1/4 cup rum or Benedictine or orange liquer or strong coffee
- For the third step, adding butter and chocolate:
- 1 1/2 sticks (6 ounces) softened, unsalted butter
- For the fourth step, the egg whites:
- 4 egg whites, room temperature
- Pinch of salt
- 2 Tb instant superfine granulated sugar
Braised Short Ribs

In a small bowl, combine water, 2 tablespoons oil, mustard, vinegar and seasonings; mix well
- 6 tablespoons water
- 6 tablespoons olive oil, divided
- 4 teaspoons Dijon mustard
- 4 teaspoons red wine vinegar
- 4 teaspoons dried basil
- 4 teaspoons dried thyme
- 2 teaspoons dried rosemary, crushed
- 1/4 teaspoon pepper
- 2 teaspoons crushed garlic
- 6 to 8 boneless beef short ribs (about 1-1/2 pounds)
- 1 can (8 ounces) tomato sauce
Multicultural Stuffing

This recipe came from Saveur's Thanksgiving issues a few years back and has become a family favorite
- 7 tbsp butter
- 1 tsp sesame oil
- 3 small yellow onions, peeled and chopped
- 2-7 cloves garlic, peeled and finely chopped
- Salt and reshly ground black pepper
- 1/2 bunch celery, ribs separated and chopped
- 1/2 lb Shitake mushrooms, stemmed, caps diced
- 1 1 lb loaf Challa bread, cut into 1/2 inch cubes and left out to dry for 2 to 3 days
- 1 1/2 cups jarred peeled roasted chestnuts, diced
- 1 cup canned water chestnuts, drained and sliced
- 1-2 tbsp sesame seeds, toasted
- 4 tsp sweet paprika, preferably Hungarian
- 1 egg lightly beaten
- leaves of 1/2 bunch of parsley, finely chopped
- 1 tsp chopped leaves of one fresh herb or a mixture, such as thyme, oregano, savory, tarragon, and basil
- 1/2-1 cup chicken stock, warm
Pear and Current Chutney

- 1 cup dried currants
- 6 tbsp pear brandy
- 4 bosc pears, cored and cut into 1/2 inch pieces
- 2 ribs celery, cut into 1/4 inch pieces
- 1/2 cup sugar
- 1/3 to 1/2 cup lemon juice
- 3 to 3 1/2 inch pice of ginger, peeled and grated
- pinch cayenne

- 2 large (3 1/2 ounces each) ripe plum tomatoes , cut into rough chunks
- 1 tablespoon(s) white wine
- 2.5 ounce(s) (up to 3) canned tuna in olive oil
- 10 Italian or Greek black olives , pitted and quartered

- 2 tsp margarine
- 3/4 cup chopped onion
- 2 tsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups 1% low-fat milk
- 2 cups cooked long-grain rice
- 3/4 cup (3 oz.) crumbled feta cheese
- 1 large egg, lightly beaten
- 2 large egg whites
- 10 oz package frozen, chopped spinach, thawed, drained and squeezed dry
- Olive oil flavored cooking spray
- 2 Tbsp. grated Parmesan cheese

Irish Creme Cheesecake

- 1/4 cup and 2 tablespoons chocolate cookie crumbs
- 1 tablespoon and 1 teaspoon confectioners' sugar
- 1 tablespoon and 1 teaspoon unsweetened cocoa powder
- 1 tablespoon butter
- 3/4 (8 ounce) package cream cheese, softened
- 1/4 cup and 1 tablespoon white sugar
- 1 tablespoon unsweetened cocoa powder
