New York Deli Style Potato Salad

Like the title says, just the way you'd get it in a New York Jewish deli
- 2 md Red skin potatoes; cooked and peeled
- 1 Sour pickles (up to 2)
- 1 md Onion or 2 scallions
- 3 tb Mayonnaise
- 1 ts Vinegar
- 1/2 ts Sugar
- 1 ts Salt
Fakes (Greek Lentil Soup)

There is a Greek restaurant near us that makes a Fakes that is to die for
- 8 ounces brown lentils
- 1/4 cup olive oil
- 1 tbsp minced garlic
- 1 onion, minced
- 1 lg carrot, chopped
- 1 qt water
- 1 pinch dried oregano
- 1 pinch crushed, dried rosemary
- 2 bay leaves
- 1 tbsp tomato paste
- 1 cinnamon stick
- salt and pepper to taste
Deli Style Macaroni Salad

This is, without a doubt, the absolute best macaroni salad I have ever had
- 1 ¼ cups nonfat whipped salad dressing, such as Kraft Miracle Whip Myself, I use real Mayo...)
- 2 tablespoons white-wine vinegar (I cut it back to 1 tbs)
- 1 tablespoon Dijon-style mustard
- ½ teaspoon salt
- ¼ teaspoon fresh-ground black pepper
- 1/2 pound elbow macaroni, cooked, rinsed under cold water and drained
- 1 cup sliced celery (I skipped the celery)
- ½ cup chopped green bell pepper
- ½ cup chopped red bell pepper
- ½ cup chopped red onion (I might add more than this next time)
Swordfish Stir Fry with Feta and Tomatoes

This is a recipe my daughter made for me on my last birthday
- 1/2 pound green beans, trimmed and cut into 1-inch pieces
- 1 pound swordfish
- 1 can (14.5-oz.) chopped tomatoes, drained, juice reserved
- 3 cloves garlic, peeled and minced
- 2 teaspoons crushed dried oregano
- 1/4 teaspoon ground black pepper
- 1/4 cup Kalamata olives, pitted and chopped
- 2 ounces feta cheese, crumbled

- 4 * 4 lbs pork ribs
- 3/4 * 3/4 cup light brown sugar
- 1 * 1 teaspoon hickory smoke salt
- 1 * 1 tablespoon paprika
- 1 * 1 tablespoon garlic powder
- 1/2 * 1/2 teaspoon ground red pepper (optional)
- 2 * 2 cups of your favorite barbecue sauce (mine is Sweet Baby Ray)

Directions Bring a large pot of salted water to a boil over high heat

- 3 large potatoes, peeled and sliced
- 7 slices bacon, chopped
- 1 tablespoon butter
- 1 large onion, sliced
- 1/4 cup white wine
- 2 tablespoons creme fraiche
- 1 (8 ounce) round Reblochon cheese
- salt and ground black pepper to taste

- 3/4 cup dry rub

- 1 cup sugar
- 1/2 cup fresh orange juice
- 1 tsp freshly grated lemon zest

- Salt to taste
- Pepper to taste
- 1/4 cup extra virgin olive oil
- 1 medium yellow onions, chopped
- 4 large garlic cloves, minced
- 2 cups Chianti wine
- 1 32-oz can crushed tomatoes
- 3 cups beef broth
- 2 tsp fresh rosemary, chopped
- *Your grocery store butcher can cut into individual ribs and de-bone
