Pumpkin Whoopie Pies

Makes 16 sandwich cookies Preheat oven to 350°F with rack in middle
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground cloves
- 1 cup packed light brown sugar
- 1/2 cup vegetable oil
- 1 (15-ounce) can pure pumpkin (not pie filling)
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 tablespoons packed light brown sugar
- Pinch of salt
- 1/2 tablespoon water
- 1/2 cup pecans
- 6 ounces cream cheese, softened
- 3/4 stick (6 tablespoons) unsalted butter, softened
- Pinch of salt
- 1 1/2 cups confectioners' sugar
- 1 tablespoon bourbon (optional; substitute 1 teaspoon vanilla extract)

Pineapple Avocado Mango Salsa Recipe

Gently toss to combine all ingredients
- 1 whole small avocado (or half a large), diced
- 1 cup diced pineapple (or 8-ounce can pineapple tidbits, drained)
- 1 cup diced mango (or 8-ounce can diced mangos, drained)
- 10 cherry or grape tomatoes, quartered
- 1/2 sweet onion, minced
- 1 teaspoon minced garlic

- 1/4 cup margarine or butter
- 1 cup onion, finely chopped
- 1 pound fish fillets cut into 4 pieces
- 1 4-ounce can sliced mushrooms
- 1/2 pint (8 ounces) shucked oysters, drained but save liquor
- 1/2 cup liquid (juice and liquor from mushrooms and oysters)
- 1/4 cup dry sherry
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
