Fried Egg and Sausage Ciabatta Breakfast Pizzas

Makes 8 servings Preheat oven to 450°F
- 1 loaf ciabatta bread (about 1 pound)
- 1 cup chopped green onions
- 8 tablespoons olive oil, divided
- 8 ounces sliced hot pepper Monterey Jack cheese
- 1 pound spicy or sweet Italian sausages, casings removed
- 8 large eggs

In a large skillet, melt the butter
- 4 tablespoons unsalted butter
- 1/2 pound lean ground beef
- 1/2 pound ground pork
- 1/4 pound chicken livers, trimmed and finely chopped
- 1 onion, finely chopped
- 1 small green bell pepper, finely chopped
- 4 large garlic cloves, minced
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground cloves

1.Just like making steamed rice, rinse your rice and drain
- Coconut Milk Steamed Rice
- 2 cups of rice
- 3 screwpine leaves (tie them into a knot as shown above)
- Salt to taste
- 1 small can of coconut milk (5.6 oz size)

- Tamarind Juice
- 1 cup of water
- Tamarind pulp (size of a small ping pong ball)
- Sambal Ikan Bilis (Dried anchovies sambal)

In a skillet over medium heat, warm 1 teaspoon coconut oil
- 1 teaspoon coconut oil
- pinch of red pepper flakes
- 1/2 cup cubed sweet potato
- 1/3 cup chopped kale
- 1 clove minced garlic
- pinch of salt
- 1/2 cup cooked quinoa
The Maine Squeeze (Blueberry, Oat, and Ginger Smoothie)

Place soy milk, blueberries, steel cut oats, honey, ginger, vanilla, lemon zest, and lemon juice into blender
- 2 cups unsweetened soy milk, such as Silk, or dairy milk
- 2 cups frozen blueberries
- 1 cup cooked, cooled steel cut oats (see note above)
- 2 tablespoons honey
- 1 1/2 teaspoons chopped fresh ginger
- 1 teaspoon vanilla extract
- 1/4 teaspoon zest and 2 teaspoons juice from 1 lemon

Wash the quinoa well to remove the bitter saponin, and cook with water in a pot, approximately 30 minutes
- 1 cup sugar for making caramel
- 12-ounce can of evaporated milk
- 14-ounce can of sweetened condensed milk
- 7 eggs
- 1 teaspoon vanilla extract
- 1 cup of quinoa
- 2 cups of water for cooking the quinoa
- Water for the bain-marie
- Mint leafs and edible flowers for garnish
Blueberry-Pineapple Smoothie

In a blender combine all ingredients except the optional pineapple and/or blueberry topper
- 2 cups fresh baby spinach
- 1 cup frozen blueberries
- 1 banana
- 1/2 cup vanilla yogurt
- 1/4 cup chopped fresh pineapple
- 1/4 cup frozen dark sweet cherries
- 1/4 cup orange juice
- Chopped pineapple and/or fresh blueberries (optional)

- 2 cups whole wheat flour
- 5 1/2 cups rolled oats
