Chocolate Truffles

Place the 10 ounces of chocolate and butter in a medium size glass mixing bowl
- 10 ounces bittersweet chocolate, chopped fine
- 3 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 tablespoon light corn syrup
- 1/4 cup brandy
- 1/2 cup Dutch process cocoa powder, finely chopped nuts, and/or toasted coconut, for coating truffles
- 8 ounces semisweet or bittersweet chocolate, chopped fine
Spinach with Pineapple

Heat the skillet over medium heat, add olive oil, the onions, pineapple and garlic
- 1 tablespoon olive oil
- 10 ounces spinach, washed and cut crosswise into
- 3 -inch pieces
- 1/4 cup chicken broth
- 1/2 pineapple (or 3 cups cubed pineapple), cut into
- 1/2 -inch cubes
- 1/2 red onion, roughly chopped
- 2 garlic cloves, minced
- 1/2 teaspoon red chili flakes
Fried Manchego Cheese

Place the flour, egg, and panko bread crumbs in 3 separate dishes
- 1 cup all-purpose flour
- 1 egg, lightly beaten
- 1 cup panko bread crumbs
- 1/2 pound Manchego cheese, cut into 1 1/2-inch cubes
- Canola oil, for frying
- Honey, for drizzling
- Smoked paprika, for sprinkling
