- 2 tomatoes, cut into wedges
- 1 large Japanese eggplant, cut into 1-inch rounds
- 1 red onion, peeled and cut into 1-inch wedges
- 1 potato, peeled and cut into 1-inch cubes
- 3 garlic cloves, minced
- 1/4 cup extra-virgin olive oil
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried oregano
- 4 to 6 slices toasted sourdough bread, optional for main dish

- 8 ounces (about 1 cup) sour cream
- 1/4 cup milk
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder

- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2/3 cup creme fraiche
- Zest of one lemon

- 1/4 cup sunflower seeds
- Nonstick cooking spray
- 1/3 cup maple syrup
- 2/3 cup packed brown sugar
- 1/2 cup unsweetened cranberry juice
- 1 1/2 teaspoons ground cinnamon
- 2 cups old fashioned rolled oats
- 1/2 cup chopped roasted and salted almonds

Bananas Foster
