- 1 cup all-purpose flour

- 1/2 pound veal scaloppine or eye round, cut across the grain into 4 equal pieces

One Pot Creamy Parmesan Chicken with Mushroom Rice

In a medium-sized pot or skillet add the olive oil and turn to medium-high heat
- 1 pound chicken breast (cubed)
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- salt
- pepper
- 1 cup long grain rice (uncooked)
- 2 1/2 cups chicken broth
- 6 ounces sliced mushrooms (about 1 cup)
- 1/2 cup heavy whipping cream
- 1/4 cup shredded parmesan cheese (I prefer freshly grated)

Hummingbird Cake

1 Preheat oven to 350° F
- 3 cups all purpose flour
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 2 cups sugar
- 1 tsp. ground cinnamon
- 1/2 tsp nutmeg (optional)

- 1 cup canola oil
- 2 tsp vanilla extract
- 1 8 oz. can crushed pineapple, with juice
- 2 cups mashed bananas (about 3-4 bananas)
- 1 cup finely chopped pecans
- 1 lb cream cheese, softened
- 1 cup (2 sticks) unsalted butter, softened
- 2 lbs (32 oz.) confectioners’ sugar
- 1 tsp vanilla
- 1 Tbsp Cointreau**
- 1 cup roughly chopped pecans, for topping (optional, toasted)
- Edible flowers for garnish (optional)

While the orange zest offers delicious flavor, it can curdle the whipped cream slightly if left to sit
- 2 cups heavy cream
- 1/2 cup marscarpone cheese, at room temperature
- 3 tablespoons dark rum
- Zest of 1/4 orange, optional
- 1/2 cup confectioners' sugar
- 2 to 3 ounces good quality dark chocolate, finely chopped
- 6 premade cannoli shells (can be purchased empty at a bakery)
- Special equipment: piping bag with wide star tip
