Lamb Burgers w/ Red Onion Aïoli/Egg

1. Gently mix lamb, 1 tsp
- 1 1/2 lb. ground lamb
- 1 1/2 tsp. ground cumin
- Kosher salt and freshly ground black pepper, to taste
- 5 cloves garlic, peeled and wrapped in aluminum foil
- 1 large red onion, sliced crosswise into 1/4"-thick rings
- 1 cup olive oil
- 2 egg yolks
- Juice and zest of 1 lemon
- 1/2 cup canola oil
- 2 medium ripe Hass avocados
- Juice of 1 lime
- 4 hamburger buns, split
- Thinly sliced romaine lettuce and tomatoes, for serving
- 4 fried eggs, for serving
Tagliatelle Bolognese

1. Heat oven to 300°. Toss tomatoes, half the oil, salt, and pepper on parchment paper-lined baking sheets
- 8 plum tomatoes, cored and sliced 1/2" thick crosswise
- 1/3 cup olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1 lb. beef rib bones (ask your butcher)
- 12 cups chicken stock
- 1 medium carrot, minced
- 1 small white onion, minced
- 1 stalk celery, minced
- 1 lb. ground flank steak (ask your butcher)
- 1 cup dry tannic red wine, preferably sagrantino di montefalco
- 3 bay leaves, preferably fresh
- 12 oz. tagliatelle pasta
- 1/3 cup grated parmesan
- 1 sprig rosemary
- 1 sprig sage

- 1 ⁄2 head green cabbage (about 1 pound), thinly sliced

- 6 tbsp. fresh lime juice, plus wedges to serve
- 2 tbsp. vegetable oil
- 2 scallions, thinly sliced on the bias

Filling 1. Cream the butter
- Directions:
- Base
- 1/2 cup butter
- 1/4 cup sugar
- 5 tablespoons cocoa powder
- 1 egg (lightly beaten)
- 1 teaspoon vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1 cup shredded coconut
- 1/2 cup walnuts (chopped)
- Filling
- 1/3 cup butter (room temperature)
- 3 tablespoon custard powder (or vanilla pudding powder)
- 1/4 cup milk
- 3 cups icing sugar (powdered sugar)
- Topping
- 8 ounces semisweet chocolate
- 2 tablespoon butter
- Base
- 1 . Melt the butter in a sauce pan.
- 2 . Stir in the sugar and cocoa powder until smooth.
- 3 . Whisk in the egg and vanilla extract and remove from heat.
- 4 . Stir in the graham cracker crumbs, coconut and walnuts.
- 5 . Press into a greased 8 inch square pan and chill in the fridge for 20 minutes.
Orecchiette all Norcina (pasta with sausage, herb, and mushroom cream sauce)

I added one major twist to my version--cremini mushrooms
- 8 oz orecchiette pasta (or other small pasta such as rigatoni or penne)
- Kosher salt
- 2 tablespoons olive or grapeseed oil
- 1/2 pound hot Italian pork sausage (substitute mild or turkey sausage, if you prefer)
- 1/2 yellow onion, diced
- 2 large garlic cloves, crushed
- 8 oz cremini mushrooms, cleaned and coarsely chopped
- 2 cups heavy cream
- 2 tablespoons fresh rosemary, finely minced
- 1/2 teaspoon ground nutmeg
- 1/2 to 1 teaspoon red pepper flakes (skip if you prefer less heat; use more if you'd like a lot of spice)
- 1 cup grated parmigiano-reggiano cheese
- Freshly ground black pepper
