Coleslaw-Simple Creamy Southern Coleslaw with Mayonnaise

Here's a mayonnaise based creamy cole slaw that's not too sweet and a few little tweaks to make it really special
- Ingredients for the slaw:
- 1 pound green cabbage (about half a medium cabbage)
- 1 large carrot, peeled
- 1/2 small white onion
- Optional. Add 1/2 red or green bell pepper, sliced thin or hashed.
- Optional. Add 3 radishes, red or white, hot if you like, sliced thin or hashed.
- Optional. Add 1 small minced jalapeño if you like it hot. Chipotle powder is another way to amp it up.
- Ingredients for the dressing:
- 1 tablespoon distilled vinegar
- 1/2 cup mayonnaise
- 1 tablespoon white sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon celery seeds (not celery salt)
GREEN CHILE TURKEY QUESADILLAS

Use leftover turkey (or chicken) to make these Green Chile Turkey Quesadillas
- 4 (burrito sized) flour tortillas
- 2 cups chopped cooked turkey (or use rotisserie chicken)
- 1 (4 oz) can chopped green chilies
- 1/4 cup chopped onion
- 1/2 teaspoon garlic powder
- 3 cups shredded co-jack cheese (or whatever blend of cheese you prefer)
- Toppings of choice- avocado, tomatoes, chopped cilantro, salsa, sour cream
ORANGE & CINNAMON ROASTED PECANS

1. Preheat oven to 275 degrees F and lightly coat a baking sheet with cooking spray
- 3 cups whole pecans
- 1 egg white
- 1 tablespoon pure orange extract (or 2 drops Certified Pure Therapeutic Grade® Wild Orange oil )

1. In a small bowl, stir together the garlic, chili powder, cumin, coriander, sugar and salt
- 3 cloves garlic, minced
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1 1/4 pounds boneless chuck steaks, trimmed of fat
- 1 tablespoon vegetable oil
- 2 yellow onions, finely chopped
- 1 (15-ounce) can tomato sauce
- 1/2 cup water
- 4 ounces Monterey Jack cheese, shredded, divided
- 4 ounces sharp cheddar cheese, shredded, divided
- 1/3 cup chopped fresh cilantro
- 1/4 cup chopped canned pickled jalapeños
- 12 (6-inch) corn tortillas

1. Combine the water, sugar and salt in a mixing bowl and sprinkle the yeast on top
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 2 teaspoons kosher salt
- 2 1/4 teaspoons active dry yeast (1 packet)
- 22 oz. (4 1/2 cups) all-purpose flour
- 4 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cups baking soda
- 1 egg yolk + 1 tablespoon water, whisked together (for egg wash)
- Coarse salt, for sprinkling

- 2 pounds beef chuck roast, trimmed and cut into 1 - 1 1/2 inch cubes

- 2 cups firmly packed, mashed, cooked sweet potatoes (see note)
- 1/4 cup granulated sugar
- 1/4 cup firmly packed, light brown sugar

ALL BUTTER PIE CRUST TUTORIAL

Whisk together pastry flour, salt and sugar
- 250 g pastry flour (2 1/4 cups, measured by fluffing the flour then spooning it in)
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 125 g cold butter, cubed into 1/2 inch cubes (1/2 cup + 1 tablespoon)
- 64 g cold water, or as much or as little as needed
