- 4 4 4 large eggs
- 1 1/4 1 1/4 1/4 cups Double-Dutch Dark Cocoa or Dutch-process cocoa

- 1 1 1 teaspoon espresso powder
- 1 1 1 tablespoon vanilla extract
- 1 1 1 cup (2 sticks) unsalted butter

- 1 1/2 1 1/2 1/2 cups King Arthur Unbleached All-Purpose Flour
- 2 2 2 cups chocolate chips
French Toast Pancakes

Instructions Heat a large skillet or griddle over medium heat
- 1 cup flour
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 egg, beaten
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup milk

"STIR-FRIED BEEF WITH BLACK PEPPER

In a bowl, combine all the ingredients for the velveting mixture and mix well
- For the Velveting Mixture:
- 1 tablespoon Shaoxing cooking wine
- 1 teaspoon soy sauce
- 1 teaspoon tapioca starch
- 12 ounces beef tenderloin, cut against the grain into 1/8-inch-thick slices
- For the Sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce
- 2 tablespoons Shaoxing cooking wine
- 1 teaspoon sugar
- 1/3 cup beef stock or water
- 2 teaspoons tapioca starch
- To Finish the Beef:
- 1/2 cup vegetable oil
- 6 thin slices fresh ginger
- 2 garlic cloves, thinly sliced
- 1 medium onion, cut into 1/8-inch-thick slices
- 1 tablespoon black peppercorns, coarsley cracked

- 3 Tbsp Unsweetened Dutch-process Cocoa Powder (21 g)
- 5 Oz Bittersweet or Semisweet Chocolate (140 g) chopped
- 1 Cup Whole Milk (250 ml)
- 3/4 Cup Sugar (150 g)
- 1 Pinch Salt
- 5 Large Egg Yolks
- 1/2 Tsp Vanilla Extract
- 2 Cups Peppermint Patties, crumbled or 150 g Mint Flavored Chocolate bar, chopped
- 1/8 Tsp Mint Oil or Extract
Homemade BBQ Sauce

- 3 Tbs Vegetable Oil
- 1/2 Lrg Sweet Onion, finely diced
- 3 Cloves Garlic, mashed
- 1/2 C Pineapple, finely diced
- 1/2 C Tomato Sauce
- 1/2 C Ketchup
- 1/2 C Apple Cider Vinegar
- 3 Tbs Worcestershire
- 1 1/2 Tbs Fresh Lemon Juice
- 3 Tbs Brown Sugar
- 2 Tbs Molasses
- 1 Tb Deli Mustard
- 1 Tb Dry Hot Mustard
- 1 Thai Chili
- 1 Tsp Sriracha Hot Sauce
- 1 Tsp Soy Sauce
- 1 C Water
- Fresh Ground Pepper
Bourbon Bacon Baked Beans

Place the beans in a large bowl and add enough water to cover them by 1 inch
- 16 oz. dry navy beans
- 3 cups water
- 1/2 lb. bacon, chopped
- 1 yellow onion, minced
- 2 Tablespoons tomato paste
- 2 Tablespoons molasses
- 1 teaspoon dry mustard
- 1/2 cup chili sauce
- 1/2 cup bourbon
- 1/2 cup strong coffee
- 1 cup fresh pineapple, chopped to a pulp
- 1/2 cup brown sugar
- Salt to taste
- Black pepper to taste
- Pinch chile flakes
Cheese Stuffed Shells - a great freezer meal!

Instructions Cook shells according to box directions for ½ of the recommended time
- 12 ounce box Jumbo Pasta Shells
- 32 ounces cottage cheese
- 2 cups shredded mozzarella
- 3/4 cup grated parmesan (or whatever kind of parmesan you can easily acquire)
- 3 eggs
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- For baking (later) : 28 ounce can marinara (spaghetti) sauce for each time you want to serve these
BUTTERY CHICKEN CORDON BLEU SLIDERS

- 1 1/2 tbsp Dijon mustard
- 1 1/2 tbsp honey
- 1 tsp fresh lemon juice
