Chicken Bacon Alfredo Roll Ups

PREPARATION 1. Preheat oven to 350ºF/ 175ºC 2
- 8 lasagne noodles
- 2 cups cooked, shredded chicken
- 1 lb bacon, cooked and crumbled
- 8 oz shredded mozzarella

- 1 Tsp garlic powder
- 1/2 tsp garlic, minced
- 2 cups heavy whipping cream

Hasselback Potatoes with Easy Garlic Confit

Instructions Heat the oven to 425°F / 220ºC with a rack in the lower-middle position
- 4-6 medium potatoes, (Yukon Gold or Russet)
- Coarse kosher salt
- Freshly ground black pepper
- 1/2 cup light olive oil or neutral oil (120ml)
- 4 tablespoons unsalted butter (60g)
- 1/2 cup garlic cloves, peeled but left whole
- a few sprigs thyme
Orange Chicken

Toss the chicken in the sesame oil, white pepper, garlic powder, salt, and Shaoxing wine; set aside for 20 minutes
- For the chicken:
- 1 pound boneless chicken thighs, cut into chunks
- 1/4 teaspoon sesame oil
- 1/8 teaspoon white pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 teaspoon Shaoxing wine
- 1/4 cup cornstarch
- 1 1/2 cup canola or vegetable oil for shallow frying the chicken
- For the sauce:
- 1 tablespoon canola or vegetable oil
- 6 dried red chili peppers
- 3 to 4 pieces dried tangerine or mandarin orange peel (optional)
- 2 star anise
- 1/4 cup fresh orange juice
- 1/4 cup chicken stock
- 2 tablespoons rice wine vinegar
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 2 tablespoons cornstarch, mixed into slurry with 2 tablespoons water
- 1 scallion sliced on an angle into 1 1/2-inch pieces

- 1 tablespoon baking powder
- 3/4 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), cut into 12 pieces, softened, but still cool
- 2 cups packed sweetened shredded coconut (about 8 ounces)
- Buttercream
- 4 large egg whites
- 1 cup granulated sugar

- 1 pound unsalted butter (4 sticks), each stick cut into 6 pieces, softened, but still cool
