Stir Fry with Orange Sauce

The secret to good stir-frying is lots of heat, so preheating the pan is crucial
- Meat:
- 3/4 Pound Boneless, skinless chicken breasts , other meat, seafood, or tofu, cut into small, even-sized pieces and drained
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Dry Sherry
- Vegetable Categories:
- Use Any Combination From Each of the Four Batch Categories Below for a Total of 1 1/2 Pounds)
- Carrots, cauliflower, onions, or peppers (first batch)
- Asparagus, green beans, broccoli, or butternut squash (second batch)
- Cabbage, celery, chard, fennel, mushrooms, peas, sugar snap peas, summer squash, or zucchini (third batch)
- Scallions, fresh herbs, tender greens, or tomatoes (fourth batch)
- Other Ingredients:
- 2 Tablespoons Chopped Scallions, white part only
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Minced Fresh Ginger
- 2 Tablespoons Canola Oil or Peanut Oil (2 to 4)
- Sauce:
- 1 Large Orange, zested to yield 2 teaspoons minced zest, juiced to yield 1/4 cup juice
- 1/2 Teaspoon Granulated Sugar
- 2 Tablespoons Low-sodium Chicken Broth
- 1 Tablespoon Soy Sauce, preferably light style
- 1 Pinch Table Salt
Stovetop Mac 'n Cheese One Pot

Cook your noodles according to package directions, drain, return to pot and toss with the butter
- 3 cups noodles (uncooked)
- 3 tablespoons butter
- 2 1/2 cups cheddar cheese (weight 10 oz.)*

- 2 quarts water
- 2 meaty smoked ham hocks or ham bone
- 2 pounds fresh green beans
- 1 tablespoon chicken bouillon or base (like Better than Bouillon)
- 1 teaspoon freshly cracked black pepper, or to taste
- 1 cup chopped onion
- 3/4 cup country ham, tasso, or baked ham, pulled or chopped, optional
- 1 pound red-skinned potatoes, chopped into chunks (about 3-4 medium)
- 1/4 teaspoon of Creole or Cajun seasoning, or to taste, optional
- Salt and pepper, to taste
- 1 tablespoon of butter or bacon fat, to finish, optional
