Buttery Cornbread Yeast Rolls

In a large mixing bowl, combine the milk, water and sugar
- 1/2 cup warm milk (about 110 degrees)
- 1/2 cup warm water (about 110 degrees)
- 1 1/2 Tablespoons granulated sugar
- 1 package active dry yeast
- 3 large egg yolks
- 1 1/2 teaspoons coarse salt
- 3 Tablespoons unsalted butter, melted and slightly cooled
- 1 cup yellow cornmeal
- 2 cups bread flour
- Olive oil or Nonstick cooking spray, to oil bowl and plastic wrap
- 1-2 Tablespoons butter, melted
- Additional yellow cornmeal for sprinkling
- 2-4 Tablespoons butter

Directions: Place ham, spiral side down, in pear and orange juices
- Glaze Ingredients:
- 1 spiral cut ham (mine was 12 pounds, but you can make any size ham you want– just adjust glaze accordingly)
- 2 cups pear juice (find this in the baby food aisle)
- Juice from 1 orange
- 1 cup Turbinado sugar (also called “Sugar in the Raw”)
- 2 tsp. cinnamon
- 3/4 tsp. clove
- A few drops of water

- 1/2 pound of andouille or other spicy smoked sausage, cut into bite-sized chunks
- 1 cup of chopped onion
- 1/2 cup of chopped green bell pepper
- 1 tablespoon of minced garlic
- 1/8 cup of sliced pickled jalapenos, chopped
- 2 large (1 pound 12 ounce) cans of Bush's original baked beans, undrained
- 1 cup of homemade or commercial barbecue sauce
- 1/8 cup of pure cane syrup (like Steen's) or molasses
- 1 teaspoon of Tiger sauce or other hot sauce
- 1/4 cup of brown sugar
- 1 teaspoon of Creole mustard
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
- Kosher salt and freshly cracked black pepper

- I love using a mix of chocolate chips for these cookies--bittersweet, milk and semi-sweet--but use whatever sounds good to you.
- 1 cup (2 sticks) unsalted butter, cut into 1-inch pieces
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup granulated sugar
- 3/4 cup firmly packed dark brown sugar
- 1 1/2 teaspoons vanilla
- Scant 1/2 teaspoon orange extract
- 1 Tbsp orange zest
- 2 large eggs, at room temperature
- 1 1/2 to 2 cups bittersweet chocolate chips (or a combination of different kinds of chips), roughly chopped into hunks and shards (see note)
