- 1 teaspoon kosher salt
- 1-1/2 teaspoons ground black pepper
- 2-1/4 teaspoons paprika
- 1-1/2 teaspoons garlic powder
- 3/4 teaspoon celery seeds
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander

Pork with Ginger and Spring Onion

The key to tender and succulent pork or beef in this dish is to marinate the thin slices of meat
- Marinade:
- 300 G Pork, cut into thin strips
- 4 Stalks Spring Onions, cut into inch-long sections on the diagonal
- 5 White Button or Shitake Mushrooms, sliced (optional) (5 to 6)
- 1 Piece Ginger (1 inch) peeled and sliced
- Oil for Cooking
- 1 Tbsp Chinese Rice Wine (or Dry Sherry)
- 1 Tbsp Light Soy Sauce
- 1 Tsp Cornflour
- A Dash of White Pepper
- Seasoning:
- 1 Tbsp Chinese Rice Wine (or Dry Sherry)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Light Soy Sauce
- 1/2 Tbsp Dark Soy Sauce (for Colour, optional)
- 1/2 Tbsp Sesame Oil
- 4 Tbsp Water
- 2 Tsp Corn Flour, dissolved in 2 tbsp water

- Sun Dried Tomato and Basil Bread Dip:
- 12 dry sun-dried tomatoes
- 1/2 chopped onion
- 2 cups extra virgin olive oil

- 1 clove crushed garlic
- 2 tablespoons freshly chopped basil

- Night before:
- 1 1/4 cups bread flour
- 3/4 cup lukewarm water
- 1/4 teaspoon instant yeast
- Day of:
- 3 1/2 cups bread flour
- 3/4 cup semolina flour
- 2 teaspoons salt
- 1 1/2 teaspoons instant yeast
- 1 1/2 cups herbed olive oil
- 2 cups lukewarm water
- 1/2 cup finely grated parmesan
