Slow Cooker Moroccan Chicken

This is a recipe from Mom
- 1 medium onion, chopped
- 8 oz carrots, baby or halved lengthwise if large
- 1/2 cup pitted dried plums / prunes
- 1 14-oz can chicken broth
- 4 large chicken breasts, cut into large pieces or 8 bone-in chicken thighs, skinned
- 1 1/2 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
Tangy Cocktail Meatballs

I have served these at lots of parties over the years and they are always a huge hit
- 1 beaten egg
- 1 10 oz can condensed French Onion Soup or 1 package dried French Onion soup mix and 10 oz water)
- 2 cups herb-seasoned stuffing mix or small herbed croutons
- 1/2 tsp seasoned salt
- 2 pounds lean minced beef
- 1 cup ketchup
- 8 oz passata or tomato sauce
- 1 cup water
- 1/3 cup packed brown sugar
- 1/4 Worcestershire sauce
- 1/4 cup vinegar
- 2 tbsp quick-cooking tapioca
Spicy Lamb Tagine

1. Trim any fat off the lamb and cut it into 2
- 800 g (1 lb 12 oz) lean lamb leg steak
- 125 g (4½ oz) onions, chopped
- 2 cloves garlic, chopped
- ½ teaspoon cayenne pepper
- 5 cm (2 in) cinnamon stick, broken in half
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 10-12 saffron strands
- Salt and black pepper
- 125 g (4½ oz) ready-to-eat dried apricots, quartered
- 175 g (6 oz) carrots, diced
- 100 g (3½ oz) courgettes, diced
- 350 g (12 oz) tomatoes, chopped
- 2 tablespoons chopped fresh coriander
- 2 tablespoons chopped fresh parsley
- 300 g (10½ oz) couscous
- To garnish: 1 tablespoon each of chopped fresh coriander and parsley

- 2 onions
- 2 tsps fresh ginger, peeled and minced
- 2 cloves garlic, minced
- 1/4 tsp ground cumin
- 1 can (14.4 oz) chick peas, drained
- 1/4 small lemon, seeded and finely chopped plus wedges for serving
- 6 plum tomatoes, coarsely chopped
- 2 sticks cinnamon
- 3-4 large chicken breasts, boneless and skinless, cut into large pieces
- Fresh coriander, chopped (optional)

- 1 cup leek or celery, chopped

- 1 cup water
- 2 tbsp Worcestershire sauce

- 1 tsp black pepper
White Chicken Chili

Add everything to slow cooker and give it a stir
- 1 large onion, diced
- 2 cloves, garlic
- 1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
- 2 (15 ounce) cans cannellini beans, drained and rinsed
- 1/2 - 3/4 cup green jalapeno chilies (tin), chopped into small pieces
- 1 (14.5 ounce) can chicken broth or water and 2 OXO cubes
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- cheese, sour cream, chopped tomatoes, cilantro (optional, for serving)
Aromatic Pork and Rice Pot

Add pork, onions, garlic, ginger, cinnamon, bay leaf and star anise to a Dutch Oven and stir-fry 4-5 minutes
- 400 g lean pork, cubed or cut into thin strips
- 2 onions, peeled and finely chopped

I was pleased to find a slow cooker pot roast recipe that is not packed with unhealthy ingredients
- 2 to 2.5 lb boneless beef chuck pot roast
- 1 lb whole tiny new potatoes (or 3 medium potatoes, cubed into equal sized chunks)
- 8 carrots, cut into 1-inch pieces
- 2 small onions, cut into wedges
- 3/4 cup water
- 1 tbsp Worcestershire sauce
- 1 tbsp concentrated beef stock (Beef Bovril or equivalent)
- 1 tsp dried basil, crushed
