Gourmet "Rice-a-Roni"

1. Cook the rice according to package directions and set aside
- 1 lb. extra lean ground beef

Courgette Curry

Quite hot and spicy--nice balance with sweeter curries
- 1 tsp cumin seeds
- 1 tsp black mustard seeds
- 1 onion, peeled, halved and thinly sliced
- 2 garlic cloves, peeled and crushed
- 1 tbsp mild or medium curry powder
- 700 g / 1 lb 8 oz courgettes (zucchini), cut into slices
- 400 g can chopped tomatoes
- 1 tbsp tomato puree
- 1/2 tsp artificial sweetener
- Small handful freshly chopped mint leaves
- Small handful freshly chopped coriander leaves
Roasted Mediterranean Vegetable Rice Salad

Made as part of a lunchtime buffet
- 3 mixed peppers, deseeded and chopped
- 1 red onion, peeled and chopped
- 1 small aubergine, chopped
- 1 tsp dried basil
- 2 tbsp balsamic vinegar
- 198 g / 7 oz dried easy cook long grain and wild rice
- 400 g can cherry tomatoes in tomato sauce, drained
- 100 g mangetout
- 185 g can tuna in spring water, drained (optional)
Couscous Salad with Black Beans, Mushrooms & Corn

1. Boil couscous in water with OXO cube, 6 minutes
- 1 chicken OXO cube
- 1 cup Israeli couscous (or orzo)
- 1/2 pound cremini or button mushrooms, sliced 1/2 inch thick
- 1 small bunch spring onions, thinly sliced
- 1 1/4 cups fresh or frozen corn kernels (or small tin of sweet corn, drained)
- 1 can black beans, rinsed and drained
- 2 tbsp fresh lime juice
- Salt and pepper
Richard's Birthday Cheesecake

I made this cheesecake for Richard's 40th birthday and wish now I had taken a photo! It got good reviews
- Crust:
- 2 cups finely ground graham crackers,
- 30 about 30 squares
- 1/2 teaspoon ground cinnamon
- 1 stick butter, melted
- Filling:
- 1 pound (2 8-oz blocks) cream cheese, softened
- 3 eggs
- 1 cup sugar
- 2 cups nonfat plain yogurt
- 1 lemon, zested
- Dash of vanilla
Lamb & Sweet Potato Stew

Delicious, can also be made in the slow cooker
- 6-8 lean lamb steaks, trimmed of visible fat
- 2 red onions, peeled and finely sliced
- 2 cm piece of ginger, grated
- 4 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tbsp Schwartz Cook Art Moroccan spice blend (or 1 tsp each ground coriander & ground cumin)
- 5 tomatoes, diced (or 1 400 g tin chopped)
- 750 g sweet potatoes, peeled and cut into chunks
- 2 tbsp lemon juice
- 1 tbsp soy sauce
- 1 tsp clear honey
- 1 cinnamon stick
- coriander leaves, to serve
White Bean Chicken Stew

This is a bit of cross between a soup and a stew and very simple in the slow cooker
- 4-6 boneless chicken breasts, cut into chunks
- 4 chopped carrots
- 1 large leek, chopped
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 tins white beans (cannellini or butter beans are nice)
- 2 cups baby corn
- 3-4 cups chicken stock
- 1 tsp ground cumin
- 1 tsp ground thyme
- 1 1/2 tbsp chili powder
- fresh cilantro (to serve)
Fragrant Lemongrass Chicken with Vegetable Rice

Thai chicken and rice meal that is very healthy and simple
- 1 fresh lemongrass stick, very finely chopped (or 2 dried lemongrass sticks, whole and removed after cooking)
- 500 g sliced chicken breasts
- 1 garlic clove, minced
- 1 cm fresh ginger, minced
- 2 leeks, finely choped
- 3 carrots, cut into thin strips
- 255 g mushrooms, sliced
- 340 g dried Thai jasmine rice
- 2 tbsp white wine vinegar (or rice wine vinegar)
- 2 tbsp soy sauce
- 1 pt / 568ml hot vegetable stock
- 170 g baby spinach
- 4 spring onions, finely sliced lengthways
Ham Minestrone

One of my favorite soups--very thick and filling and also healthy
- 2 medium onions, peeled and finely chopped
- 2 garlic cloves, minced
- 3 sticks celery, cut into 1 cm dice
- 2 carrots, peeled and cut into 1 cm dice
- 400 g can chopped tomatoes
- 794 ml / 28 fl oz chicken stock
- 57 g / 2 oz dried pasta shapes
- 400 g can cannellini beans, drained
- 198 g / 7 oz lean ham, cut into small pieces
- 4 tbsp chopped flat-leaf parsley
Turkey & Sweet Potato Pie

This is delicious, but the name was misleading and I made it with turkey instead of chicken
