Baked Salmon One Pot

Ingredients
- 1 large bulb fennel, sliced thinly
- 350 g / 12 oz baby new potatoes, halved
- 2 courgettes, sliced diagonally
- 4 salmon fillets
- 200 g / 7 oz cherry tomatoes
- juice 1 lemon
- small handful dill, cut into sprigs

Preparation
Step 1
Heat oven to 190 degrees C. Place fennel, potatoes and courgettes into a large baking dish and spray with Fry Light or other cooking spray. Season and place in top of the oven for 20 minutes or until veg is beginning to caramelise and crisp up.
Add tomatoes to the other veg in the oven and put the salmon on top. Cook for a further 5-10 minutes until salmon begins to flake. Squeeze over the lemon juice and sprinkle on the dill. Serve immediately.
