Crockpot Sirloin Tender Roast

1. Place beef into a slow cooker
- 3 lb Sirloin roast
- 2 tbls Brown sugar
- 3 cloves Garlic minced
- 2 ts Thyme leaves crushed
- 1 can French onion soup
- 1 bottle Dark beer I used Sierra Nevada
- 8 Mushrooms cut in half
- 1/2 ts pepper to taste
- 1/2 ts crushed Rosemary
- 1/4 cup flour
Herb-Lime Grilled Chicken

In a resealable plastic bag, combine herbs, mayonnaise, oil, lime juice, cumin, and salt
- 1 cup finely choopped fresh herbs (basil, rosemary, etc.)
- 1 cup mayonnaise
- 1/2 cup extra-virgin olive oil
- 1/4 cup fresh lime juice
- 2 t. ground cumin
- 1 t. salt
- 6 boneless, skinless chicken breasts
Savory Corn and Bacon Bread Pudding

In large skillet over medium heat, cook bacon until crisp
- 10 slices bacon, chopped
- 1 cup finely chopped green bell pepper
- 1 cup finely chopped red bell pepper
- 1/2 cup finely chopped onion
- 2 cups frozen corn, thawed and drained
- 1 1/2 t. dried thyme
- 1/2 to 1 t. salt
- Freshly ground black pepper
- 4 eggs, beaten lightly
- 2 cups half and half
- 6 cups 3/4 inch cubes of French Demi baguette
Sour Cream and Onion Smashed Potatoes

1. COOK POTATOES Bring potatoes and enough water to cover by 1 inch to boil in large pot over high heat
- 2 pounds small red potatoes, scrubbed
- 4 tablespoons unsalted butter
- 4 scallions, white parts minced, green parts sliced thin
- 1 cup sour cream
- 1/2 cup half-and-half
- Salt and pepper
Bread Machine Pizza Dough

Follow the manufacturers directions for the dough cycle on your bread machine
- 1 cup Warm water
- 2 tbsp Vegetable oil or olive oil
- 3/4 tsp Salt
- 3 cups Bread flour
- 2 tsp Bread machine yeast
- 1 tbsp Cornmeal for dusting
Beer Dip for Pretzels

In a large bowl, beat the cream cheese, beer and dressing mix until smooth
- 2 packages (8 ounces each) cream cheese, softened
- 1/3 cup beer or nonalcoholic beer
- 1 envelope ranch salad dressing mix
- 2 cups (8 ounces) shredded cheddar cheese

- DOUGH
- 3 large eggs
- 3 tablespoons cold water
- 3 cups (15 ounces) all-purpose flour
- 1 1/4 teaspoons salt
- 6 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
- 6 tablespoons vegetable shortening, cut into 1/2-inch pieces and chilled
- FILLING
- 1 tablespoon olive oil
- 12 ounces broccoli rabe, trimmed and chopped
- 8 ounces hot Italian sausage, casings removed
- 1/4 teaspoon salt
- 2 garlic cloves, minced
- 1 pound (2 cups) whole-milk ricotta cheese
- 4 ounces Pecorino Romano cheese, grated (2 cups)
- 2 large eggs
- 1 teaspoon pepper
- 8 ounces thinly sliced aged provolone cheese
- 6 ounces thinly sliced hot capicola
- 1 large egg yolk beaten with 1 tablespoon water

- 1 teaspoon Worcestershire sauce
- 2 cups chopped cooked chicken
- 1 cup frozen sweet peas, thawed
- 1/2 cup thinly sliced green onions
- 1/2 cup chopped fresh flat-leaf parsley
- Salt and pepper to taste
