Pasta for Christmas (or for a crowd)

- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, crushed
- 1 bay leaf, fresh or dried
- 1/4 pound pancetta, thick cut, chopped into small bits (Italian cured pork, ask at deli counter)
- 1/2 pound bulk hot Italian sausage
- 1 pound combined ground beef, pork and veal
- 1 medium carrot, peeled and finely chopped
- 1 rib celery, chopped
- 1 medium onion, chopped
- 1 cup good quality dry red wine
- 1 cup prepared beef stock, paper container or canned
- 2 (32-ounce) cans chunky style crushed tomatoes
- A handful chopped flat leaf parsley leaves
- 1/4 teaspoon (a couple of pinches) allspice or cinnamon
- Coarse salt and black pepper
- 2 pounds penne rigate, cooked to al dente
- Grated Pecorino Romano, as an accompaniment
- Fresh, crusty bread, for mopping
Hot Caprese Dip

Preheat oven to 425 degrees Fahrenheit
- 8 ounces full-fat cream cheese, softened
- 1/2 cup shredded low-moisture part skim mozzarella
- 3 heaping tablespoons chopped fresh basil, plus more for garnishing
- 1/4 teaspoon fresh cracked pepper, more to taste
- 10.5 ounces grape tomatoes (about two cups)
- 8 ounces fresh mozzarella, dried and cut into small pieces
- bread or crackers for dipping
Grilled ginger Chicken

In a large bowl or resealable bag, combine all ingredients
- 2 pounds boneless chicken breasts
- 1 (1-inch) piece fresh ginger, thinly sliced
- 1/2 cup soy sauce
- 1/4 cup extra-virgin olive oil
- 1 1/2 t. dry sherry
- 1 1/2 t. Worcestershire sauce
- 1/2 t. liquid smoke
- 1/2 t. toasted sesame oil
- 1/2 t. dry mustard
- 1/2 t. garlic powder
Grilled Corn on the Cob

- 6 T. butter
- 6 ice cubes

- 1 cup sifted flour
- 1/2 cup oats
- 1/2 cup brown sugar
- 1 (1 pound) can pumpkin
- 1/2 cup butter
- 1 (13 1/2 oz.) can evaporated milk
- 2 eggs
- 3/4 cup sugar
- 1/2 t. salt
- 1 t. ground cinnamon
- 1/2 t. ginger
- 1/2 t. cloves
- 1/2 cup pecans
- 1/2 cup brown sugar
- 2 T. butter
Teriyaki Shish Kabobs

For marinade, mix first five ingredients
- 1 cup sugar
- 1 cup reduced-sodium soy sauce
- 1 cup ketchup
- 2 teaspoons garlic powder
- 2 teaspoons ground ginger
- 2 pounds beef top sirloin steak, cut into 1-1/2-inch cubes
- 2 to 3 small zucchini, cut into 1-inch slices
- 1/2 pound medium fresh mushrooms
- 1 large green or sweet red pepper, cut into 1-inch pieces
- 1 small onion, cut into 1-inch pieces
- 2 cups cubed fresh pineapple
Classic Carmelized Onion Dip

- 3 cups thinly sliced onion (about 1 pound)
- 2 tablespoons Dierbergs butter
- 1 tablespoon Dierbergs olive oil
- 2 cloves garlic, minced
- 1 ⁄2 teaspoon seasoned salt
- Pinch ground red pepper
- 4 ounces (1⁄2 of 8-ounce package) cream cheese, softened
- 1 ⁄2 cup Dierbergs sour cream
- 1 ⁄2 cup light mayonnaise
- Coarse salt and freshly ground black pepper

- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup packed brown sugar
- 3 T. granulated sugar
- 1 egg
- 2 t. vanilla
- 1/2 t. baking soda
- 1/2 t. baking powder
- 1/2 t. salt
- 1 3/4 cups all purpose flour
- 1 1/2 t. instant espresso powder, slightly crushed
- 8 ounces semisweet chocolate chips

- 1 tablespoon vegetable oil
- 1 onion, chopped fine
- 2 pounds 90 percent lean ground beef
- 4 poblano chiles (or 6 Anaheim), stemmed, seeded, and chopped
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 1/4 teaspoons salt
- 1 teaspoon dried oregano
- 3/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1 (10-ounce) can Ro-Tel tomatoes, drained
- 10 ounces Monterey Jack cheese, shredded (2 1/2 cups)
