Chorizo and fish work so well together
- For the soup
- olive oil
- 2 cloves garlic, peeled and sliced
- 2 fresh red chillies, deseeded and finely sliced
- 1 bunch fresh basil, leaves picked and stalks finely chopped
- 1 iberico sausage, around 200g, sliced
- 1/2 bottle white wine
- 2 x 400 g tinned plum tomatoes
- 1 handful basmati rice
- 400 g tinned chickpeas, drained
- sea salt
- freshly ground black pepper
- 2 bream fillets, from sustainable sources, ask your fishmonger, skinned and pin-boned
- 2 pollock fillets, from sustainable sources, ask your fishmonger, skinned and pin-boned
- 12 raw prawns, from sustainable sources, ask your fishmonger, peeled, tails left on
- 2 lemons, cut into wedges
- For the pangrattato
- 2 handfuls breadcrumbs
- 1 bunch fresh flat-leaf parsley, roughly chopped
- zest of 1 lemon
Chunky Guacamole

Halve and pit the avocados
- 4 ripe avocados
- 3 limes, juiced
- 1/2 red onion, chopped
- 1 garlic clove, minced
- 2 serrano chiles, sliced thinly
- 1 big handful fresh cilantro, finely chopped

Classic Italian Lasagna

Preheat oven to 375 degrees F
- Bechamel Sauce:
- 5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna

- 4 cups whole milk at room temperature

- 1 pound sweet Italian sausage, sliced
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil
- 1/2 teaspoon fennel seed
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Lobster Tails Thermidor

Bring a pot of water to a boil, 3 or 4 inches deep
- Ingredients
- 4 (6 to 8-ounce) packaged lobster tails, shell jumbo shrimp or prawns can be substituted
- 4 tablespoons butter, divided
- 1 small white onion, finely chopped
- 2 tablespoons all-purpose flour
- Splash dry white wine or dry sherry
- 1/2 cup milk, eyeball it
- 1/3 cup grated white cheddar
- 1/2 teaspoon paprika or crab boil seasoning, recommended: Old Bay
- 2 tablespoons Parmesan
- 2 tablespoons bread crumbs
- Handful parsley leaves mixed with 2 cups baby greens, for plate garnish

Black beans are probably one of the most common staples of Cuban cooking
- Ingredients:
- 1 pound dried black beans
- 4 cups of water
- 3 cloves of garlic, peeled and crushed
- 1 medium onion, peeled and chopped
- 1/4 pound salt pork, chopped
- 1 pound smoked ham hocks, cut in 1 inch pieces
- 2 teaspoons paprika
- 3 teaspoons ground cumin
- 2 bay leaves
- 4 cups chicken stock
- 1/2 teaspoon chili powder
- 1 tablespoon vinegar
- salt and pepper to taste

In a saute pan heat a little oil over med-high heat and saute shallots, onions, and garlic for one minute
- 1/2 lb lobster meat, cut into small chunks
- 2 tablespoons minced shallots
- 2 tablespoons chopped green onions
- 3 garlic cloves, crushed
- 1/4 cup white wine
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Tabasco sauce
- 1 teaspoon dried thyme
- 6 tablespoons dry sherry
- 1 teaspoon paprika
- 1 cup hot water
- 1 teaspoon lobster base (better than boulion)
- 4 ounces tomato paste
