Italian Cheese-Stuffed Meat Loaf

1 Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray
- 2 eggs
- 1 1/2 lb lean (at least 80%) ground beef
- 2 cups soft French bread crumbs
- 1/2 cup shredded Parmesan cheese (2 oz)
- 1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cloves garlic, minced
- 1 can (8 oz) pizza sauce
- 1 1/2 cups shredded provolone cheese (6 oz)
- 1 jar (7.25 oz) roasted red bell peppers, drained, chopped
- 1/4 cup chopped ripe olives

In a large saucepan, cook and stir sugar and corn syrup until the sugar is dissolved
- 2 cups sugar
- 2 cups corn syrup
- 1 jar (40 ounces) chunky peanut butter
- 6 cups Cheerios
- 6 cups crisp rice cereal
Chicken and Ravioli Carbonara

1 In 10-inch skillet, heat dressing over high heat
- 2 tablespoons Italian dressing
- 1 lb boneless skinless chicken breasts, cut into 1/2-inch strips
- 3/4 cup Progresso® chicken broth (from 32-oz carton)
- 1 package (9 oz) refrigerated cheese-filled ravioli
- 1/2 cup half-and-half
- 4 slices bacon, crisply cooked and crumbled
- Shredded Parmesan cheese, if desired
- Chopped fresh parsley, if desired
Pizza Pasta Salad

1. Bring a large pot of salted water to a boil
- Salt and pepper
- 1 pound short pasta such as bow ties, shells or penne
- 1/4 cup extra-virgin olive oil
- 1/3 cup rice vinegar
- 1/2 cup chopped oil-packed sun-dried tomatoes
- 3/4 cup sliced marinated artichoke hearts
- 8 ounces bocconcini (small fresh mozzarella nuggets), halved (about 18 pieces)
- 4 ounces pepperoni or salami, diced
- 1/2 cup shredded fresh basil leaves
- 2 tablespoons chopped fresh oregano
Turkey Sausage and Gnocchi Soup

- 1 (4.5-ounce) link hot turkey Italian sausage
- 2 cups water
- 1 (16-ounce) package vacuum-packed gnocchi (such as Bellino or Vigo)
- 1 (14-ounce) can fat-free, less-sodium beef broth
- 1 (14 1/2-ounce) can Italian-style stewed tomatoes, undrained and chopped
- 1/2 cup (2 ounces) grated fresh Parmesan cheese

- 4 Italian sausages
- 1 yellow pepper, cut into strips
- 1 green pepper, cut into strips
- 1 red pepper, cut into strips
- 1 vidalia onion, cut into strips
- 1/2 jar marinara sauce
- 1/2 cup red wine, i use merlot
- 1 pinch sugar
- 1 pinch salt
- 1 pinch oregano
