Tilapia with Spicy Orange Salsa

- 4 medium navel oranges (about 2 lb.)peeled and chopped
- 1/2 cup small-diced red onion
- 1/2 cup coarsely chopped fresh cilantro
- 2 Tbs. fresh lime juice
- 1 tsp. ground cumin
- Kosher salt
- 1 fresh serrano or jalapeño chile, minced (seeds included)
- 4 5-oz. tilapia fillets

- 2 cups all-purpose flour

Shrimp Scampi

Method 1 Heat a sauté pan on high heat
- 1 pound large (16-20 count) shrimp, shelled* and de-veined, tail-on for presentation if you want
- 2 tablespoons olive oil
- 2-3 tablespoons butter
- Salt
- 3-4 garlic cloves, slivered, or 1 Tbsp minced garlic
- 1/2 to 1 teaspoon red pepper flakes
- 1/2 cup white wine
- 2 tablespoons finely chopped parsley
- Freshly ground black pepper to taste
- 1 Tbsp lemon juice
