Shrimp tacos with citrus cabbage slaw (20 minute meal)

1. In a large bowl, whisk the orange and lime juices, sour cream, 1/2 tsp salt and 1/4 tsp pepper
- 1/4 C fresh orange juice
- 2 TBLS fresh lime juice
- 2 TBLS sour cream
- Kosher salt and black pepper
- 1/4 small cabbage (8oz) shredded - can use bagged slaw mix
- 1 C corn kernels, from 1-2 ears or frozen and thawed
- 1 jalapeno, seeded and chopped (I used 1/2)
- 1 TBLS olive oil
- 1 LB peeled and deveined medium shrimp
- 8 small corn tortillas, warmed
Sauteed Green Beans with Pecans

Cook package of green beans in boiling water 1 1/2 minutes or until crisp-tender
- 1 12 oz package prewashed cut green beans
- 2 tsp butter
- 1/4 cup shallots - chopped
- 1/4 cup pecans - chopped
- 1/4 tsp salt
- 1/4 tsp pepper
Lemon-Garlic Herb Chicken w/ Grilled Prosciutto Wrapped Asparagus

Heat Grill or grill pan to medium high
- 4 cloves garlic, peeled
- Salt
- 2 lemons, zested
- 1 tsp fennel seed (I use 1/2 tsp)
- 5-6 sprigs fresh thyme, leaves stripped and finely chopped
- 3-4 sprigs fresh rosemary, leaves stripped and finely chopped
- A handful flat-leaf parsley, finely chopped
- 1/2 to 2/3 C extra-virgin olive oil, divided
- Black pepper
- 4 boneless, skinless chicken breasts (I pound them thin)
- 4 boneless, skinless chicken thighs
- 1 LB asparagus spears
- 8 slices prosciutto

Make the biscuits: Preheat oven to 425 degrees In large bowl, whisk together the first 5 ingredients
- 2 C all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 7 TBLS firmly packed brown sugar
- 4 TBLS cold unsalted butter, cut into bits
- 1/2 C plus 1 TBLS buttermilk
- 2 TBLS skim milk
- 1 TBL sugar
- 1 Recipe Macerated Strawberries
- 2 pints strawberries, rinsed, hulled and sliced
- 3/4 tsp vanilla extract
- 1/3 C sugar
- Stir together the strawberries, vanilla and sugar and let stand for 30 minutes before serving
White Sangria

Mix together 1st 6 ingredients
- 1 lemon, sliced thinly
- 1 lime, sliced thinly
- 1 red delicious apple, slice thinly
- 2 750 ml bottles Sauvignon Blanc or Chardonney, chilled
- 1 cup brandy
- 1 2 liter bottle of 7up or Sprite, chilled (can use diet)
- 1 cup frozen grapes
- Smaller batch portions - 12 oz wine, 1 cup 7up, and 3 TBLS brandy
- or
- 6 oz wine, 1/2 cup 7 up and 1 1/2 TBLS brandy
Muffins - Pumpkin Chocolate Chip Muffins

Heat oven to 350 degrees
- 1/2 C (1 1/4 oz) sliced unblanched
- almonds
- 1 2/3 C all-purpose flour
- 1 C sugar
- 1 TBLS pumpkin pie spice
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1 C plain pumpkin (half of a 1 lb
- can)
- 1/2 C (1 stick) butter, melted
- OR 1/2 C applesauce
- 1 C (6 oz) chocolate chips
Baked Italian Shrimp

Combine breadcrumbs, cheese and parsley in a shallow dish and set aside
- 2/3 C fine, dry breadcrumbs - Panko
- 1/2 C grated Parmesan cheese
- 1/4 C chopped fresh parsely
- 2 LBS unpeeled, large fresh shrimp
- 2 tsp minced fresh garlic
- 1/2 tsp seasoned salt
- 1/2 tsp freshly ground pepper
- 1/4 C olive oil
- Can serve with Vinho Verde wine - Portuguese wine.

Strawberry Pie - Creamy Strawberry Pie

Make crust: Heat oven to 350 degrees
- Crust:
- 6 oz Nilla wafer cookies (1/2 of a 12 oz box)
- 2 TBLS sugar
- 5 TBLS melted butter
- Filling:
- 2/3 C sugar
- 1/2 C cran-raspberry juice
- 2 C strawberries
- 1/4 C cornstarch
- 6 C strawberries
- Topping:
- 1/2 C heavy cream
- 2 TBLS sugar
