Lemon Pie

Crust: Melt butter and combine graham cracker crumbs together and press into a 9 inch pie plate
- Crust:
- 1 1/2 C graham cracker crumbs
- 1 stick butter
- Filling:
- 3 Egg yolks
- 3 lemons
- 1 Can sweetened condensed milk
- Topping:
- Heavy whipping cream
Baked Potato Soup - loaded

- 2 medium baking potatoes, unpeeled
- 1 Can (14.5 oz) fat-free reduced sodium chicken broth
- 1 C milk
- 3 slices bacon - cooked, crumbled and divided
- 3/4 C shredded cheddar cheese, divided
- 2 TBLS sliced green onions, divided
- 1/4 C sour cream

- Cake:
- 4 eggs
- 1 2/3 cups sugar
- 1 cup oil
- 16 oz can pumpkin
- 2 cups flour
- 2 tsp baking powder
- 2 tsp
- cinnamon
- 1 tsp salt
- 1 tsp baking soda
- Icing:
- 1 3oz pkg cream cheese
- 1/2 cup butter
- 1 tsp vanilla
- 2 cups sifted powder sugar
Shrimp - Grilled Shrimp Scampi

1. Preheat a grill to medium-high; oil the grate
- 1/3 C EVOO
- 5 cloves garlic, very thinly sliced
- 2 lemons, 1 zested and both juiced
- 1 tsp crushed red pepper
- salt
- 1 zucchini, halved crosswise and sliced lengthwise into thin strips
- 1 squash, halved crosswise and sliced lengthwise into thin strips
- 1 1/2 LBS thawed frozen shrimp, peeled and deveined
- 2 TBLS butter, at room temperature
- 1 baguette, halved lengthwise
