Cake - Oatmeal Cake

Marian Rosse Favorite of the Rosse Family
- 1 cup oatmeal
- 1 1/4 cup boiling water
- 1 cup white sugar
- 1 cup brown sugar
- 1 stick (1/2 cup) margarine
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cup flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- ICING
- Boil in saucepan for 1 minute, stirring constantly
- 1 cup brown sugar
- 1 stick (1/2 cup) margarine
- 3 tsp. milk
- 1/2 cup coconut
- 1/2 cup nuts (broken/chopped walnuts or pecans)
Baked Potatoes

- Flour, for coating
- 2 large eggs, beaten
- Splash heavy cream or half and half (I used skim milk)
