Challah No Knead KA

- Ingred in grams:
- Dough
- 6 3/4 cups or 7 3/4 cups King Arthur Unbleached All-Purpose Flour*
- (25% white whole wheat = 234 gm WWW + 702 gm AP)
- 1 tablespoon + 1/2 teaspoon salt
- 1 1/2 tablespoons instant yeast - try SAF Gold instead
- 1 1/2 cups lukewarm water
- 4 large eggs
- 1/2 cup honey
- 1/2 cup melted butter or vegetable oil
- Add: Vanilla ext - 1 tbs?
- Opt: Replace 1/4 cup AP flour w 1/4 cup by volume potato flour - ( can do 1/4 cup per 3 cups flour)
- See step #1, below.
- Topping
- 1 egg (any size) beaten with 1 tablespoon cold water
- 2 to 3 tablespoons sesame seeds or poppy seeds, optional

- 936g King Arthur Unbleached All-Purpose Flour
- 1 tablespoon + 1/2 teaspoon salt
- 1 1/2 tablespoons instant yeast
- 340g lukewarm water
- 4 large eggs
- 170g honey
- 113g melted butter or 3 1/2 ounces vegetable oil
- Add vanilla extract - 1 tbs?
- Opt- replace 1/4 cup AP flour w 1/4 cup potato flour
- *See step #1, below.
- TOPPING
- 1 egg (any size) beaten with 1 tablespoon cold water
- 18 to 28g sesame seeds or poppy seeds, optional

- 2 McIntosh or other firm apples, peeled and cut into 1/2-inch wedges

- One 1/4-oz/7-g package active dry yeast
- 2 tbsp extra-virgin olive oil, plus more for drizzling
- 2 cups/255 g bread/strong flour
- 1 to 1 1/4 cups/175 to 200 g whole-wheat/wholemeal or white whole-wheat/wholemeal flour
- 1 tsp fine sea salt
- Cornmeal or semolina flour
- 4 to 6 oz/115 to 170 g cheese, such as shredded or fresh mozzarella, burrata, or fresh ricotta
- 2 garlic cloves, very thinly sliced
- 2 to 4 handfuls fresh veggies such as sliced tomatoes, arugula/rocket, sorrel, shaved zucchini/courgette, kale, Swiss chard, corn, or mushrooms

Black Bean & Corn Salad

- black beans rinsed and drained
- fresh corn from the cob (some people boil it for a minute or two; I dont)
- cherry tomatoes halved
- Use a food processor to combine the following then add to above ingredients
- half a red onion (the original recipe called for scallions; I prefer the onion)
- one or two jalapenos cored and seeded
- mix well Add kosher salt and peppeer
- before serving add cilantro
- sliced avocado and fresh lime juice
- As you can see, I left amounts out. The recipe is very forgiving and can be made to taste.
