- Ingredients
- 1 tablespoon plus 2 1/2 teaspoons active dry yeast
- 1 cup warm water
- 1 cup all-purpose flour
- 1 1/4 sticks unsalted butter, at room temperature
- 2/3 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 3 1/2 cups bread flour
- Extra flour, for rolling the dough (about 1 cup total)
- 1 gallon fryer oil
- 3/4 cup raspberry jam (preferably seedless), in a pastry bag fitted with a small tip
- Granulated sugar, for garnish
- Vanilla Dipping sauce, for serving, recipe follows

- 12 tbs (6 oz) unsalted butter, melted - divided - 8 tbs plus 1 tbs at a time
- 1/4 cup (1 3/4 oz) sugar
- 1 large egg plus 1 large yolk, room temp

- Note: 1 cup cake flour = 1 cup AP flour minus 2 tbs AP flour & add 2 tbs cornstarch, sift together-see for directions on substituting AP flour for cake flour:
- 3/4 cup egg yolks (8)
- 2/3 cup sugar
- 1 teaspoon grated orange peel - use more
- 1/2 cup orange juice
- 1 cup cake flour, sifted
- 1 cup egg whites (8)
- 1 teaspoon cream of tartar
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1 1/2 teaspoons lemon extract

- SWEET AND TANGY TARTAR SAUCE
- Makes about 1 cup. Published September 1, 2008. From Cook's Illustrated.
- This sauce can be refrigerated in an airtight container for up to 1 week.
- INGREDIENTS
- 3/4 cup mayonnaise
- 1/2 small shallot , minced (about 1 tablespoon)
- 2 tablespoons drained capers , minced
- 2 tablespoons sweet pickle relish
- 1 1/2 teaspoons white vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon ground black pepper
- INSTRUCTIONS
- Mix all ingredients together in small bowl. Cover with plastic wrap and let stand to blend flavors, about 15 minutes. Stir again before serving.
