Clean Eating Zucchini Bread

I knew this would be a fantastic recipe the second I had all the ingredients mixed together
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 1/4 teaspoon nutmeg
- 2/3 cup honey
- 1 generous cup grated zucchini (about 1 large zucchini)
- 2 tablespoons unsweetened apple sauce
- 2 tablespoons safflower or olive oil + extra for oiling the pans
- 1 whole egg
- 1 egg white
- 1 tablespoon fresh lemon zest
- 3/4 cup plain, non-fat yogurt
Watergate Cake

Mix cake mix, pudding, oil, eggs and soda
- 1 pkg white cake mix
- 1 box pastacio pudding
- 1 C oil
- 3 eggs
- 1 C 7up soda
- ICING
- 1 box pastacio pudding
- 1 box dream whip mix
- 1 1/2 C milk
Halftime Chili

Heat oil in heavy saucepan over med heat
- 3 T olive oil
- 1 1/2 C chopped onion
- 8 cloves garlic, chopped
- 2 lbs ground beef
- 1 envelope taco seasoning
- 1 t dried basil
- 1/2 t dried oregano
- 1/2 t dried thyme
- 1 15oz can tomato sauce
- 3 C chicken broth or veg. broth
- 1- 6 oz can tomato paste
- 2 15oz cans kidney beans, drained
Chocolate Chocolate Chip Biscotti

1. Preheat oven to 350 2
- 1 C sugar
- 1/4 C butter, softened
- 2 eggs
- 1 T van x
- 2 C flour
- 2 T cocoa powder, heaping
- 1 t baking powder
- 1 pinch salt
- 1 C chocolate chips
Black Bean Salad w/ Mango

- 2 ears raw sweet corn, about 1 cup kernels
- 1 red or orange bell pepper, small diced
- 1/2 red onion, minced
- 1 jalapeno, seeds removed and pepper minced
- 1 15-oz can black beans, drained and rinsed
- 1 large mango, ripe but firm, small diced
- juice of 1 large lime
- 1 tbsp olive oil
- 1/2 tsp cumin

- 5 red bliss potatoes
- 5 slices bacon, cooked
- 2 hard boiled eggs

- 1 T dijon

Pumpkin Bread & Butter Pudding

- 2 -packages Williams Sonoma Spiced Pecan Pumpkin Quick Bread
- 1 -jar Williams Sonoma Pecan Pumpkin Butter
- 4 whole eggs
- 2-3 C 1/2 & 1/2
- 1 T van extract
- 2 T sugar
- 3 T sugar
- 4 T room temp butter
CORN, AVOCADO, AND TOMATO SALAD

Combine the corn, avocado, tomatoes and onion in a large glass bowl
- Dressing:
- 2 cups cooked corn, fresh or frozen (see Note)
- 1-2 avocados, cut into 1/2-inch cubes
- 1 pint cherry or grape tomatoes, halved
- 1/2 cup finely diced red onion
- 2 tablespoons olive oil
- 1/2 teaspoon grated lime zest
- 1 tablespoon fresh lime juice
- 1/4 cup chopped cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Flourless Chocolate Torte

Preheat oven to 300 Grease round or heart shaped cake pan and dust w/ cocoa powder
- Unsweetened cocoa powder for dusting
- 15 oz bittersweet chocolate, finely chopped
- 18 T (2 1/4 sticks) unsalted butter; cut into small pieces
- 7 egg yolks
- 9 T sugar
- 1 1/2 T dark rum or brewed espresso
- 1 1/2 t. van x
- pinch of salt
- 5 egg whites, at room temp
- 3 C raspberries
- 10 x sugar for dusting
Steve's Salad

Mix all in jar - extra can be refrigerated for later
- 1/4 c. wine vinegar
- 1 ,3 c. ketchup
- 1/2 c. sugar
- 1 c. salad oil
- grated red onions
- 1 Tbsp. worcestershire
- Salt, pepper & garlic to taste
- 1 pkg. fresh spinach
- 6 cooked slices of bacon, crumbled
- 2 hard boiled eggs
