- For Halibut:
- 4 (1 1/4-inch-thick) pieces skinless halibut fillet (about 6 ounces each)
- 1 cup whole milk
- 1/3 cup shelled pistachios (preferably Turkish), finely chopped
- 3 tablespoons cornmeal
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup extra-virgin olive oil
- For Spicy yogurt:
- 1 cup thick Turkish or Greek yogurt (8 ounces)
- 1/2 cucumber, peeled, seeded, and finely diced (3/4 cup)
- 2 tablespoons chopped fresh dill
- 1 tablespoon finely chopped onion
- 1 tablespoon fresh lemon juice
- 2 teaspoons dried maras pepper
- 1/2 teaspoon salt, or to taste

Fettucine with Peas, Asparagus, and Pancetta

Cook pasta in pot of boiling salted water until just tender but still firm to bite
- 12 ounces fettuccine or penne
- 3 ounces pancetta or bacon, chopped
- 1 1/4 pounds asparagus, trimmed, cut on diagonal into 1-inch pieces
- 2 cups shelled fresh green peas, blanched 1 minute in boiling water, drained, or frozen peas (do not thaw)
- 1 bunch green onions, thinly sliced, white and pale green parts separated from dark green parts
- 2 garlic cloves, pressed
- 1/2 cup finely grated Parmesan cheese plus additional for serving
- 1/3 cup heavy whipping cream
- 3 tablespoons extra-virgin olive oil

- Salad:
- 4 1/2 teaspoons fresh lemon juice

- 3 tablespoons extra-virgin olive oil

- 3/4 pound asparagus spears (about 1 bunch), trimmed
- 1/2 cup thinly sliced fennel bulb (preferably shaved with V-slicer)
- Fish:
- Nonstick vegetable oil spray
- 2 1/2 cups fresh breadcrumbs made from crustless French bread
- 3 tablespoons finely grated Parmesan cheese

Heres another good old Louisiana dish we transported north for our menu
- The Gumbo:
- 1/4 cup vegetable oil
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 2 inch chunks
- 1 pound smoked sausage (andouille, chorizo, or kielbasa), sliced
- 5 1/4 cups chicken broth or stock
- 1 1/2 cups chopped onion
- 3/4 cup chopped celery
- 1 cup chopped green pepper
- 1 jalapeno pepper, seeded and minced
- Pinch each of kosher salt and black pepper
- 2 tablespoons minced garlic
- 1 1/2 cups Brown Roux
- 2 bay leaves
- 2 teaspoons dried thyme
- Tabasco sauce
- 1/4 cup chopped fresh Italian parsley
- The Accoutrement:
- 8 cups perfect rice
Spaghetti and Meatballs alla Nonna

These are Grandma's meatballs - okay not my Grandmothers, but they are still delicious
- 1 large white onion
- 4 cloves garlic
- 2 to 4 tbsp fresh herbs (Italian parsley, basil)
- 2 tbsp grapeseed or vegetable oil
- 1/3 cup Parmigiano-Reggiano (can use half percorino, if desired)
- 4 slices thick-cut bread (approx. 2 cups)
- 1 cup milk
- 1 1/2 lb lean ground beef
- 3/4 lb ground pork
- 3/4 lb ground veal
- 1 large egg
- 1 to 2 tsp chili flakes (optional)
- 1 tbsp kosher salt
- 1 tsp freshly ground black pepper
- Tomato Sauce (approx. 3/4 cup per person) (My recipe also on Key Ingredient)
- 6 L/qt cold water
- salt (1 tsp salt per L/qt of water)
- dried or fresh pasta (approx. 4 oz per person)
