Corn and Cheese Chowder

In a large pot, melt the butter over medium-high heat
- 4 tablespoons (1/2 stick) butter
- 1 whole onion, chopped
- 3 slices bacon, cut into pieces
- 3 whole bell peppers, finely diced (red, yellow, orange)
- 5 ears corn, kernels sliced off
- 1/4 cup all-purpose flour
- 3 cups chicken stock or broth
- 2 cups half-and-half
- 1 heaping cup grated Monterey Jack
- 1 heaping cup grated pepper Jack
- 1/3 cup sliced green onions
- Salt and freshly ground black pepper
- 12 bread bowls, hollowed out OR crusty bread to serve with chowder
Parmesan Baked Pork Chops

Instructions For the sauce: In a medium bowl, whisk together all the ingredients for the sauce and set aside
- 3/4 cup tomato sauce
- 2 tablespoons dark brown sugar
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 cups dry rotini (or any spiral-shaped) pasta
- 1 tablespoon vegetable oil
- 3/4 cup diced onion
- 1 medium green bell pepper, diced (about 1/2 cup)
- 2 cloves garlic, minced
- 1/2 pound ground beef
- 1 cup freshly grated sharp cheddar cheese

- 2 pounds ground beef
- 4 cloves garlic, minced
- 1 small yellow onion, diced small, about 1 cup
- 10 medium carrots, sliced thin, about 4 cups
- 6 stalks celery, sliced thin, about 3 cups
- 6 cups water
- (1) 16-ounce can diced tomatoes
- (1) 28-ounce can crushed tomatoes
- (1) 14-ounce can tomato sauce
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 teaspoon kosher salt, adjust to taste
- 1 teaspoon freshly ground black pepper
- 1/2 head of green cabbage, roughly chopped, about 4 cups
Chicken Enchiladas & Enchilada Sauce

Preheat oven to 400. Combine chicken with 2 cups of the cheese & 1 cup of the enchilada sauce, chiles & cilantro
- For the enchilada sauce:
- 3 c. shredded rotisserie chicken
- 3 c. shredded cheddar cheese
- 2-3 c. enchilada sauce (canned or homemade, recipe to follow)
- 1 can chopped green chiles, drained
- 1/3 c. chopped fresh cilantro
- 12 soft corn tortillas
- 1 T. oil
- 1/2 onion, minced
- 3 T. chili powder
- 3 garlic cloves, minced
- 2 tsp cumin
- 2 tsp sugar
- 2 8oz. cans tomato sauce
- 1/2 c. water
- salt & pepper

Preheat the oven to 275 degrees F
- 2 poblano peppers, seeded and sliced
- 1 medium onion, sliced
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- One 4 1/2-pound bone-in pork shoulder
- 1 1/2 cups chicken broth
- 4 jalapeno peppers, sliced
- 2 limes, zested and juiced
- 1 orange, zested and juiced
- For serving: corn tortillas, sliced radishes, pickled jalapeno slices, pico de gallo, hot sauce, lime wedges and fresh cilantro leaves

- 3/4 cup milk
- 1/3 cup butter, softened

- 21 ounce can Lucky Leaf Strawberry Pie Filling
- 2 teaspoons cinnamon
- 1/2 teaspoon sugar

- 4 ounce cream cheese, softened
