Lemon Crisp Cookies

Preheat oven to 325° Cream butter and sugar together
- 2/3 cup butter or margarine
- 1/2 cup brown sugar, packed
- 1/2 tsp lemon extract
- 2/3 cup sifted flour
- 1 1/2 cup quick oats, uncooked
Rice Pudding

Combine all ingredients. Cook on top of stove, stirring occasionally, about 45 minutes, until thickened

Mix dry ingredients together and cut in butter until crumbly

1. In a medium bowl, dissolve the yeast in the water with a pinch of sugar
- 1 tablespoon (12 gr) dried yeast, not instant
- 3/4 cup (175 ml) tepid water
- 2 cups (260 gr) all-purpose flour
- 1/2 teaspoon sea salt
- 1 cup ( 200 gr) sugar (which will be divided later)
- (Plus additional sugar for rolling out the pastry)
- 1 stick salted butter (110 gr), cut into 1/2-inch (2 cm) pieces and chilled
- 2-3 tablespoons additional salted butter, melted

Preheat oven to 350°. In a large bowl combine flour, butter, and brown sugar
- Crust:
- 1 cup all purpose flour
- 1/3 cup butter, softened
- 1/2 cup firmly packed brown sugar
- 1/2 cup chopped nuts
- Filling:
- 1 8-oz package of cream cheese, softened
- 1/4 cup sugar
- 1 egg
- 2 Tbsp milk
- 2 Tbsp lemon juice
- 1/2 tsp vanilla
