Stuffed Jalapeños

- 2 tablespoons sour cream
- 3 tablespoons cilantro leaves, chopped fine
- kosher salt and freshly ground black pepper to taste

SWEET Jam Cake With Burnt Sugar Glaze

- For the cake:
- 1 1/2 sticks unsalted butter, at room temperature, plus more for buttering pan
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground allspice
- 1 teaspoon freshly-grated nutmeg
- 3/4 teaspoon ground cloves
- 1 cup sugar
- 4 large eggs, at room temperature
- 1 cup blackberry, raspberry or other fruit jam
- 3/4 cup plus 2 tablespoons buttermilk
- 2/3 cup raisins
- 2/3 cup chopped walnuts or pecans
- For the burnt sugar glaze:
- 1 1/4 cups packed dark brown sugar
- 1 tablespoon unsalted butter
- 1 1/3 cup milk
- 1 1/4 teaspoons vanilla extract

Mix together. Add lemons and limes and jalapenos to the mixture

- 2 cans clamatoe juice
- a cup worsteshire sauce
- 3 tbsp Chicago steak seasoning

Bananas Foster

1. In a large skillet over medium heat, melt butter and cook until it turns light brown, about 5 minutes

- 1 banana, sliced in half lengthwise

- 1/2 c Plus 2 tbsp Flour

- 3 tbsp. Vegetable oil

- 6 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup Baker's Special Dry Milk or nonfat dry milk
- 2 tablespoons instant yeast
- 1/2 teaspoon ground cinnamon
- 1/2 cup sugar
- 2 1/2 teaspoons salt
- 10 tablespoons unsalted butter, at room temperature**
- 1 tablespoon vanilla extract
- *Use the greater amount in winter or in a dry climate; the lesser amount in summer or a humid climate.
- **Reduce the salt to 2 1/4 teaspoons if you use salted butter.
