Chocolate mint truffles

Break up the chocolate into small pieces about 1/4 to 1/2 inch in size
- 1 pound of dark chocolate
- 1 cup of heavy cream
- 1 tsp mint extract
Chinese Crunch Salad

Chop the onions, break up the ramen noodles
- 1 bag coleslaw cabbage
- 1 bunch green onions
- 1 bag chicken ramen
- 3 T toasted sesame seeds (toast at 350)
- 1-1/2 c clivered almonds, toasted in
- 2 T butter
- 3 T vinegar
- 2 T sugar
- 1 /c oil
- 1/3 t salt and pepper
- flavor packet from ramen
Cheese garlic rolls

Combine yeast, water, and sugar in large mixing bowl and allow to stand 10 minutes or until bubbly
- Garlic Butter:
- 1 Tbsp. yeast
- 1 1/2 c. warm water
- 1 1/2 Tbsp. sugar
- 1 tsp. salt
- 4-5 1/2 c. flour
- 3 Tbsp. vegetable oil
- 1 egg yolk
- 1/2 c. (1 stick) of real butter, no substitutions
- 1 1/2 Tbsp. garlic bread seasoning
- Shredded mozzarella cheese
- 1/2 c. powdered Parmesan cheese
- Garlic Bread seasoning:
- 2 tsp. Kosher salt
- 2 Tbsp. garlic powder
- 2 tsp. oregano
- 2 tsp. basil
- 2 tsp. marjoram

Quince Pound Cake

Cook quince: Peel, quarter, and core quinces
- For cooking quince
- 2 medium quinces (about 1 pound total)
- 2 cups water
- 3/4 cup sugar
- 1/2 cup honey
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon cinnamon
- 1 3/4 cups cake flour (not self-rising)
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, softened

For the filling: Line a 13 by 9-inch pan with whole graham crackers
- Filling:
- 1 (16-ounce) box graham crackers
- 12 tablespoons (1 1/2 sticks) butter
- 1 cup sugar
- 1 egg
- 1/2 cup milk
- 1 cup chopped pecans
- 1 cup or 3 (1/2-ounce) cans shredded coconut
- Topping:
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 4 tablespoons (1/2 stick) butter
- 3 tablespoons milk

Oven to 400° F. (1) Disolve yeast in milk
- Rolls:
- 1 1/4 oz. pckg. Yeast
- 1 c. warm milk
- 1/2 c. granulated sugar
- 1/3 c. melted butter
- 1 t. salt

- 4 c. all-purpose flour
- Filling:
- 1 c. packed brown sugar
- 2 1/2 TBS. cinnamon
- 1/3 c. butter
- Icing:
- 7 TBS. butter, softened
- 1 1/2 c. confectioners sugar
- 1/4 c. (2 oz.) cream cheese
- 1/2 t. real vanilla extract or almond extract
- 1/8 t. salt

1. Adjust oven racks to middle and lower-middle positions and heat oven to 325 degrees
- 2 tablespoons light brown sugar
- 3/4 cup plus 1 tablespoon granulated sugar (5 1/4 ounces)
- 1 (14-ounce) loaf challah bread, cut into 3/4-inch cubes (about 10 cups) (see note)
