Buñuelos de Espinaca (Spinach Fritters) Recipe

Defrost spinach and press out as much water as possible
- 1 package frozen spinach; 400 grams (14 oz.) or roughly one packed cup
- 1/2 tennis ball size onion; finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup flour
- 1/2 cup milk
- 1 egg, beaten
- few grinds of black pepper
- oil for frying
Momofuku Roasted Cauliflower

Combine all ingredients fish sauce, water, vinegar, sugar, and lime, and stir until sugar dissolves
- For the vinaigrette:
- 1/4 cup fish sauce
- 2 tablespoons rice wine vinegar
- 1/4 cup sugar
- Juice of 1 lime
- 1 minced garlic clove
- 1 jalapeno, thinly sliced, seeds removed
- 2 tablespoons very thinly sliced cilantro stems
- 1/2 cup cilantro leaves
- 1/4 cup chopped mint
- For the cauliflower:
- 2 small heads cauliflower
- 3/4 cup bhel mix, Rice Crispies, or Special K cereal
- 1/2 teaspoon shichimi togarashi (Japanese seven-spice powder)
- additional lime wedges and chopped mint for serving

- 1 cup Guinness beer
- 1 cup molasses
- 1/2 tsp baking soda
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 2 tb ginger
- 1 tsp cinnammon
- 1/4 tsp ground clove
- 1/4 tsp nutmeg
- 6 cardamom pods
- 3 large egg
- 1 c. brown sugar
- 1 c. white sugar
- 3/4 c. vegetable oil
Tuna Burger

In a bowl, add drained tuna and flake up
- 3 cans of flaked tuna
- 1/4 teaspoon freshly-ground black pepper
- 1/4 cup minced shallots
- 1/4 to 1/2 cup chopped parsley
- capers (to taste)
- 2 egg lightly beaten
- 1/2 cup breadcrumbs
Tarka Dal

Soak dal for 1 hour in lukewarm water
- 1/2 cup Toor Dal
- 1/2 cup Moong Dal
- 1 onion, chopped
- 1 tomato, chopped
- 1 tsp ginger grated
- 1 tsp garlic minced
- 1 tsp red chili powder
- 1 tsp mustard powder
- 1 tsp turmeric
- 1 tsp cumin
- a few curry leaves
- 2-3 red chilies
- 2 tbsp ghee
- Coriander, finely chopped for garnish

I learned to make this curry paste at Asia Scenic Cooking class in Chiang Mai Thailand
- 10 big red chilies, reconstituted in water for 10 minutes
- 2 fresh lemongrass stalks, bottom 4" only, tough outer layer discarded, thinly sliced
- 2 chopped peeled fresh galangal
- 1/2 inch piece of Turmeric root.
- 6 fresh kaffir lime leaves, finely slivered
- 2 large shallot, thinly sliced
- 5 garlic cloves, chopped
- 2 fresh red chiles, chopped
- 1 teaspoon salt
- 1/4 cup roasted peanuts
- 1/2 teaspoon ground cumin (toasted)
- 2 teaspoons coriander (toasted)
- 2 cardamom pots
- 1/2 teaspoons freshly ground pepper

- 2 leek (white parts only chopped)
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 3/4 lb cavolo nero (kale stems and center ribs discarded and leaves coarsely chopped)
- 1 cup chicken broth
- 34 cup water
- 2/3 cup heavy cream

1. In large pot of boiling salted water, cook fettuccine until tender but firm, about 3 minutes
- 12 * 12 oz fresh fettuccine
- 2 * 2 can (each 170 g) solid white tuna, drained
- 2 * 2 roasted red pepper, chopped
- 1 * 1 clove garlic, minced
- 1/2 * 1/2 tsp pepper
- 1/4 * 1/4 tsp salt
- 1/4 * 1/4 cup extra virgin olive oil
- 2-3 * 2-3 tbsp lemon juice
- 1 * 1 bunch arugula, shredded
