Mushroom Bolognese Pasta

Soak the dried porcini mushrooms in 1 cup of very warm water and let sit for 20 minutes
- 2 tablespoons olive oil
- 1 large carrot, peeled and diced
- 2 medium sized celery ribs, diced
- 1/2 medium onion, diced
- sea salt or kosher salt and freshly ground black pepper
- 3 garlic cloves, grated or minced
- 3/4 cup red wine
- 1 about 1 pound of mushrooms (I used a mix of mostly baby bellas and some shiitake), chopped
- 1 ounce of dried porcini mushrooms
- 1-1/2 cups beef (or vegetable, if you want this to be vegetarian) broth
- 1 15-ounce can whole tomatoes, crushed
- 1 15-ounce can tomato sauce or puree
- 2 bay leaves
- 2 teaspoons sugar
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
Chilled Summer Cucumber Soup

After having scoured various websites for a chilled cucumber soup, I arrived at this delicious combination
- 3 Cucumber – chunked for easy blending, peel removed
- 1/3 cup dill – fresh, chopped
- 1-3 cus. plan yoghurt (try to find natural yoghurt without gelatin, cara or starches))
- 1 medium Onion, or 2 spring onions – chopped
- 1 Garlic clove
- 1 tsp. Salt
- 3-5 tbs. Olive oil
- 2 tbs. Lemon juice
- 1 tbs. Lemon zest
- 1 tbs Fish sauce
