- 1 cup cooked quinoa (from 1/3 cup dried)

- 1/2 yellow onion (small, finely chopped)
- 2 cloves garlic (finely chopped)
- 1/4 cup freshly grated parmesan
- 1/4 cup nuts (pecans, pine nuts, or cashews, ground in a food processor or coffee grinder)
- 1/2 cup bread crumb fresh (from 1 slice sandwich bread, Udi’s Gluten-Free or regular)
- 2 large eggs (beaten)
- 2 tbsps extra-virgin olive oil

- 1/2 cup sugar
- 1/2 cup rice vinegar
- 1/4 cup water
- 1 tablespoon Garlic Chili Pepper Sauce

- 1 English cucumber, unpeeled and sliced thinly
- 1/4 cup diced red onion
- Garnish: 3 tablespoons chopped cilantro and mint 3 tablespoons chopped roasted peanuts

Heat the extra-virgin olive oil over medium-high heat in a high-sided skillet or Dutch oven
