2019 Christmas tins overview

Start changing over to the rectangular tins, as they fill more neatly than the rounds
- You really only need 14 bar cookie recipes, so you will probably need to winnow the list a bit.
- Make one recipe of Toffee for Edith and only one to share with the tins. 3 is too much. Same for the barks. One recipe will be enough for the tins.
- Don't forget to make chocolate covered peanut clusters.
- Make the Fudgy Bon Bons for the St. Mary's cookie exchange. Don't use for the tins.
Buttermilk-Carrot Cake & Frosting

1. Sift together flour, soda, cinnamon and salt in a bowl
- For the Frosting:
- 2 cup flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 3 egg
- 2 cup sugar
- 3/4 cup oil
- 3/4 cup buttermilk
- 2 tsp vanilla
- 1 8 oz. can pineapple, crushed and drained
- 2 cup carrot, grated
- 1 cup nuts, chopped
- 1 3 oz. package flaked coconut
- Buttermilk Frosting
- For the Buttermilk-Carrot cake
- 1 cup sugar
- 1/2 cup buttermilk
- 1/2 cup butter
- 1 Tbs corn syrup
- 1/2 tsp baking soda
- 1 tsp vanilla
General Tse’s Chinese Sweet and Sour Chicken

- 6 ounces skinless, boneless chicken breasts, cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 tablespoon potato starch, plus extra for coating
- 3 tablespoons water
- vegetable oil, for deep-frying
- Sweet and Sour Sauce
- 1/2 green or red pepper (or a mixture of each), cut into
- 1/2 - inch dice
- 1/2 onion, finely chopped
- 1/3 cup pineapple chunks
- 5 tablespoons white sugar
- 5 tablespoons ketchup
- 4 tablespoons white vinegar
- 1 1/4 cups cold water

General Tso's Cauliflower

Directions 1. In a medium bowl, whisk the flour, cornstarch, baking powder and salt to combine

- 1/2 cup all-purpose flour
- 1/3 cup cornstarch
- 3/4 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 cup neutral oil (like peanut or vegetable)
- 1 head cauliflower, cut into bite-size florets
- Sauce
- 2 teaspoons sesame oil
- 6 scallions, white part finely sliced, green part chopped into 1-inch pieces
- 3 cloves garlic, minced
- 1 tablespoon minced ginger
- 5 small dried chiles (optional)
- 1/4 cup vegetable broth
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons mirin
- 3 tablespoons sugar
- 1 tablespoon cornstarch
- Sesame seeds, for garnish (optional)
Meatloaf

1. Preheat oven to 350F. Grease loaf pan
- 2 1/2 slices white bread in 1/4 inch dice
- 2 lb ground Beef Top Round
- 1 onion, chopped
- 1 green bell pepper, in 1/4 inch dice
- 2 egg
- 2 tsp Worcestershire sauce
- 1 tsp celery seed
- 1 tsp brown sugar twin
- 1/2 tsp garlic powder
- 1/2 tsp seasoned salt
- 1/2 tsp pepper
- Servings: 8

Tex-Mex Ravioli Casserole

Combine first 3 ingredients
- 1 (16-ounce) jar mild salsa
- 1 (10 3/4-ounce) can tomato puree
- 1/2 teaspoon ground cumin
- 1 (28-ounce) bag frozen cheese ravioli, unthawed
- 2 (19-ounce) cans black beans, rinsed and drained
- 1/2 cup chopped fresh cilantro
- 1 bunch green onions, thinly sliced
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 1 cup (4 ounces) shredded Monterey Jack cheese
5 Minute Chocolate Fudge S'mores Mug Cake

Combine 3 tablespoons butter and 1 ounce of chocolate in a small bowl, then melt in the microwave for 20-30 seconds
- 2-3 tablespoons graham cracker crumbs
- 3 1/2 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup whole wheat pastry flour (regular can be substituted)
- 2 tablespoons unsweetened cocoa powder (mine was dark cocoa, hence the dark color)
- 1/8 teaspoon baking powder
- pinch of salt
- 1 1/2 ounces milk chocolate (chopped or morsels)
- marshmallow fluff, cream or actual marshmallows
