Chicken Enchiladas

- 5 oz. reduced fat cream cheese, softened **I substituted Greek yogurt for the cream cheese and sour cream to save some fat and calories.
- 1/4 cup light sour cream
- 10 oz. can of enchilada sauce
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded monterey jack cheese, divided
- 2 cups cooked shredded chicken **I used ground chicken
- 1 cup frozen corn kernels, thawed (canned corn works just fine, but drain it first)
- 4 oz. can diced green chiles **I added about 1/2 cup of my homemade salsa instead
- 1/2 tsp chili powder
- 1/4 tsp cumin
- Salt and pepper
- 4 scallions, thinly sliced
- 8 (8-inch) whole wheat tortillas

- 1/2 cup mayonnaise, such as Duke’s
- 1 tablespoon capers, drained and minced
- 1 tablespoon sweet pickle relish
- 1 tablespoon finely chopped fresh tarragon
- 1 tablespoon finely minced shallot
- 1 teaspoon tarragon or champagne vinegar
- 1 teaspoon minced garlic
- 1/2 teaspoon Dijon mustard
- Kosher salt
- A good sprinkle of paprika
- 20-24 large sea scallops, all about the same thickness, roughly 1 1/2 – 1 3/4 pound, side muscle removed

- 3tablespoon3 tablespoon white sugar
- 3tablespoon3 tablespoon brown sugar
- 3tablespoon3 tablespoon corn starch
- 1/2teaspoon1/2 teaspoon cinnamon
- dashA dash of nutmeg
- 3/4cup3/4 cup water
- For Pie Crust :
- 1cup1 cup (2 sticks) unsalted butter cut into cubes-chilled
- 2 1/2cups2 1/2 cups all-purpose flour
- 1teaspoon1 teaspoon salt
- 1teaspoon1 teaspoon sugar
- 1/4cup1/4 cup ice water
