- 1 1 1 cup (140 g) all purpose gluten free flour (I used Better Batter)
- 1/4 1/4 1/4 teaspoon xanthan gum (omit if your blend already contains it)
- 3/4 3/4 3/4 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon kosher salt
- 12 12 12 ounces semi-sweet chocolate chips
- 1/2 1/2 1/2 cup (100 g) granulated sugar
- 1/2 1/2 1/2 cup (109 g) packed light brown sugar
- 8 8 8 tablespoons (112 g) unsalted butter, at room temperature
- 1 1 1 egg (50 g, weighed out of shell) at room temperature, beaten
- 1 1 1 teaspoon vanilla

For a quick, no-cook version of this soup, use vacuum-sealed steamed beets, available at supermarkets
- Ingredients:
- 1 6 pound of beets (about 6 medium), cleaned, tops removed
- 1 cup gluten-free chicken broth
- ¾ cup unsweetened yogurt of choice or coconut milk (not coconut beverage)
- 3 1 tablespoons fresh lemon juice (about 1 lemon)
- 1 tablespoon sherry vinegar
- 1 tablespoon honey
- ½ teaspoon salt
- 1 1 cup seeded, small-diced cucumber (about 1 large)
- 1 cup thinly sliced green onions (about 1 small bunch)
- 1 tablespoon minced fresh dill

- 1 Tbs salt
- 1 tablespoon tbsp grated fresh ginger (you can use dried but use less)
- 1/2 tsp pepper
- 1/2 tsp coarse grind coriander
- 1/2 tsp dried mustard
