Quinoa Pilaf, Gluten Free

This gluten free quinoa pilaf with wild Swiss Chard and carrots makes for a delicious vegetarian meal or side dish!
- 1 1/2 1 1/2 1/2 cups prewashed quinoa
- 10 10 1-inch ounces (1-bunch) Swiss Chard, washed, stems removed and sliced thin, leaves cut into 1-inch pieces
- 2 2 1/4 carrots, peeled and cut into 1/4 inch pieces
- 1 1 1 shallot, minced
- 2 2 2 tablespoons vegetable oil
- to & pepper, to taste
- 1 1 1 clove garlic, minced
- 1 1 1/4 teaspoon fresh thyme, minced or 1/4 teaspoon dried
- 1 3/4 1 3/4 3/4 cups water
- 4 4 4 teaspoons lemon juice

Zucchini Fries, GF

Instructions Wash and slice zucchini lengthwise into 6-8 large steak-fry shapes
- Ingredients
- 2 medium zucchini
- 1/2 cup Jules’ Gluten-Free Flour Blend or gluten-free all-purpose flour blend of choice
- 1/2 teaspoon black pepper
- 2 large eggs
- 2 tablespoons milk of choice
- 2 cups crushed gluten-free tortilla chips
- 1 teaspoon gluten-free nutritional yeast or 1 tablespoon Parmesan cheese, optional
Rustic Tortellini Soup

This meal comes together pretty fast
- 3 Italian turkey sausage links (4 ounces each), casings removed (I used the "hot" sausage version)
- 1 medium onion, chopped
- 6 garlic cloves, minced
- 4 cups reduced-sodium chicken broth
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 package (6 ounces) fresh baby spinach, coarsely chopped
- 2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil (or, you can substitute thyme and oregano)
- 1/4 teaspoon pepper
- Dash crushed red pepper flakes (optional if not using hot turkey sausage)
- Shredded Parmesan cheese, optional
- Yield: 6 servings (2 quarts)

Bring large pot pf water to boil
- 8 oz rice sticks
- 2 T fish sauce
- 2 T low-sodium soy sauce
- 2 T brown sugar
- 1/4 t crushed red pepper, or more to taste
- 2 t vegetable oil
- 1 egg, lightly beaten
- 1 lb frozen shrimp
- 4 garlic cloves, minced
- 4 green onions, coarsely onions
- 2 C fresh bean sprouts
- 2 T chopped peanuts
- lime wedges
- fresh chopped cilantro
Cabbage Casserole

Using nonstick cooking spray, saute' the cabbage, carrot and onions until crisp-tender
- 4 cups shredded cabbage
- 1 cup grated carrot
- 1/2 cup chopped green onions
- 1/2 cup liquid egg substitute
- 1 cup skim milk
- 6 oz. shredded Swiss cheese
- 1/2 tsp seasoned salt
- lots of black pepper
- 2 tbsp minced fresh parsley
- 2 tbsp shredded Parmesan cheese

- 3/4 3/4 3/4 cup warm milk (dairy or non-dairy soy, coconut, almond, etc.)
- 1/4 1/4 1/4 cup warm yogurt (dairy or non-dairy soy, coconut, almond, etc.) OR 1/4 cup milk

- Additional oil for hands
