School Days Peanut Butter Cake

Preheat oven to 350°. Prepare a 9 x 13-inch pan with cooking spray and set aside
- For the cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- ½ cup crunchy peanut butter
- (do not use natural)
- 1 cup water
- 1 stick unsalted butter
- ½ cup canola oil
- 1 teaspoon vanilla extract
- 2 large eggs, at room temperature,
- slightly beaten
- ½ cup buttermilk, at room
- temperature
- For the frosting:
- 1 stick salted butter, softened
- ½ cup creamy peanut butter
- 6 tablespoons buttermilk
- 1 teaspoon vanilla

Doctored Pickles

This is a "seat of your pants" recipe! Original recipe calls for Sour Pickles, but Dills are equally good
- 1 jar sour or dill whole pickles
- 2 cups sugar. (Frankly, I've never measured it, I just eyeball it!)
- Lots of thinly sliced Garlic (probably at least 5 cloves)

- 2 cups Jules’ Homemade All-Purpose Flour Blend, more for dusting (see separate recipe)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon coarse sea salt
- 1/4 cup cold butter or Earth Balance Buttery Sticks, more for tops (if desired)
- 1/2 cup half & half or dairy-free liquid creamer
- 1/2 cup sour cream or yogurt of choice
- 1/4 cup powdered buttermilk*
