Pea Salad

1. Mix together all ingredients
- This recipe is very similar to one that I can remember eating as a young child. I think my grandmother on my father's side made it.
- 1 8 oz. can peas, drained
- 1/2 cup cheddar cheese, cubed small
- 2 green onions, chopped
- 2 Tbs sweet pickle relish
- 2 Tbs mayonnaise

Cranberry-Orange Creme Brulee

This creme brulee recipe is full of flavor not fat--perfect for a dessert on a chilly evening
- Cranberry Compote:
- 2 cups fresh or frozen cranberries
- 1 orange, zested and juiced(divided)
- 1 tablespoon sugar
- 1/2 cup water
- Custard:
- 1 cup skim milk
- 1 cup half and half
- 4 whole eggs
- 1/4 cup sugar
- Sugar crust:
- 4 teaspoons sugar
Short Ribs with Rosemary & Orange

Preparation: Pour the tomato sauce into a large slow cooker
- 2 cups (480 ml) Quick Tomato Sauce, or equivalent of jarred low FODMAP marinara style sauce
- 1, 14- ounce (411 g) can peeled tomatoes in juice
- 2 tablespoons Garlic-Infused Oil, made with olive oil, divided
- 1 cup (72 g) finely chopped leeks greens
- 1 cup (64 g) finely chopped scallion greens
- 1 medium carrot, trimmed, peeled and cut crosswise into 1/2-inch (12 mm) rounds
- 3 pounds (1.4 kg) boneless short ribs, cut into 3-inch to 4-inch (7.5 cm to 10 cm) pieces
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons dry red wine
- 2 teaspoons fine orange zest, made with a Microplane zester
- 1 teaspoon dried rosemary
Easy Summer Quinoa

Bring scant cup chicken (or vegetable) broth to a boil in a small saucepan
- scant 1 cup chicken or vegetable broth
- 1/2 cup quinoa
- 2 Tablespoons extra virgin olive oil
- 1 large shallot, chopped
- 3 cloves garlic, minced
- pinch red pepper flakes
- 2 cups chopped kale (about 1/2 bunch – I used lacinto kale)
- 1 small zucchini, chopped
- salt & pepper
- 2 ears sweet corn kernels (about 2 cups)
- 1/4 cup sun-dried tomatoes packed in oil, cut into strips
- 1/4 cup white wine
- 1/2 cup peas
- 1/4 cup chicken or vegetable broth
- 1/4 cup fresh basil, chopped
- shaved or fresh grated Parmesan cheese, for topping

Zucchini Lasagna

Preheat the oven to 400°F
- 6 small zucchini (about 2 1/2 pounds)
- 2 teaspoons kosher salt
- For the meat sauce
- 1 pound lean ground beef
- 1 cup tomato sauce
- 1/4 cup chopped fresh basil (optional), plus more for serving
- For the béchamel
- 4 tablespoons (56 g) ghee or extra virgin olive oil
- 2 tablespoons (18 g) tapioca starch/flour
- Pinch of freshly ground nutmeg (optional)
- 2 cups (16 fluid ounces) unsweetened almond milk
- Kosher salt
- Freshly ground black pepper
- For the ricotta layer
- 1 pound (about 2 1/4 cups) cashew ricotta or store-bought almond ricotta (I use Kite Hill)*

- FOR THE SAUCE:
- 1 Tbs. Dry Yeast
- 2/3 cup Brown rice flour or bean flour
- 1/2 cup tapioca flour
- 2 T dry milk powder or non-dairy milk powder or sweet rice flour
- 2 tsp xanthan gum
- 1/2 tsp 1 T gluten-free dry yeast
- 2/3 cup bsalt
- 1 tsp unflavored gelatin powder
- 1 tsp Italian herb seasoning
- 2/3 cup warm water (105 degrees)
- 1/2 tsp sugar or 1/4 tsp honey
- 1 tsp olive oil
- 1 tsp cider vinegar or 1/4 tsp unbuffered vitamin C crystals
- cooking spray
- 8 oz gluten-free tomato sauce
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried rosemary
- 1/2 tsp fennel seeds
- 1/4 tsp gluten-free garlic powder
- 2 tsp sugar or 1 tsp honey (optional)
- 1/2 tsp salt
Caesar Salad

1. Wash and dry Romaine. Sprinkle Salt and pepper in wooden Bowl
- 2 bunches romaine lettuce
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1 1/2 tsp wine vinegar
- 3 1/2 Tbs olive oil
- 2 Tbs Parmesan cheese
- 1 oz anchovies, chopped
- 2 eggs
- 1 cup croutons
- salt & pepper to taste

Coconut Banana Cream Pie

Recipe calls for a meringue topping but is actually called Banana Cream

- 2 large or 3 medium ripe bananas (~325 gr.)
- 2 Tbs. lemon juice
- 1 can full fat coconut milk, shaken (13.66 oz or ~1 3/4 cup)
- 6 large egg yolks
- 3/4 cup granulated white sugar
- 1/4 cup gfJules™ All Purpose Gluten Free Flour (34 gr.)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon sea salt
- 1/4 cup (4 Tbs.) butter or non-dairy alternative, cut into small pieces (I used Earth Balance® Buttery Sticks)

- 2 cups crushed (40 small) gluten free vanilla wafers (~260gr.)

- 1/3 cup gluten-free soy sauce or wheat-free tamari
- 1 (8-ounce) jar apricot preserves, preferably fruit juice sweetened
- 3-4 tablespoons rice vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper, or to taste
- 2 tablespoons tapioca starch/flour
- 3 pounds chicken wings (cut into pieces at joints)

To the water boil you can add salt, baking soda and in Montreal they add honey!
- Dry Ingredients:
- 1 package gfJules™ Gluten Free Bread Mix + yeast packet
- OR
- 3 cups gfJules™ All-Purpose Gluten-Free Flour
- 1/4 cup flax seed meal (or GF buckwheat; millet; sorghum or brown rice flour)
- 1/4 cup dry milk powder, dairy or non-dairy (e.g. Vance’s DariFree™ Original potato-based milk powder) OR almond meal
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. sea salt
- 2 1/4 tsp. instant yeast (Red Star® Quick Rise)
- Liquid Ingredients & Extras:
- 2 egg whites, room temperature
- 2 Tbs. honey or agave syrup
- 3/4 cup + 2 Tbs. warm water
- 1 tsp. salt (for the boil)
