Honey-Mustard Chicken with Roasted New Potatoes, GF

Preheat oven to 375F. Sprinkle chicken thighs with 1/4 teaspoon salt and pepper
- 4 (6-ounce) boneless, skinless chicken thighs
- 1 /2 teaspoon salt
- Coarsely ground black pepper
- 4 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 minced shallot
- 1 tablespoon minced fresh thyme leaves or ½ teaspoon dried
- 1 pound small red potatoes, cut into halves
- Olive oil cooking spray

- 1 cup vegetable oil (or other neutral oil)
- 3 1/2 cups semisweet chocolate chips, divided
- 1 cup sugar
- 1 cup brown sugar
- 4 eggs, whisked lightly to combine

Spring Cupcakes with Citrus Icing

Cupcakes are all the rage these days, and for good reason
- For the Icing:
- 1 egg, at room temperature
- 1 egg white, at room temperature
- 3 ⁄4 cup brown sugar
- 2 cups grated carrots
- 2 small zucchini, grated (about 1 cup,

Braised Leeks

Started cooking the leeks, then went in search of ideas, so I started with 1 T butter, not oil
- 4 Leeks, cleaned & trimmed with the green tops cut off
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Zest
- 1/4 Cup Low Sodium Chicken Broth
Low Calorie Chicken and Dumplings

I make this regularly. It is from an old Richard Simmons cookbook I have
- 4 skinless chicken breast halves (or 4 chicken thighs)
- 1 1/4 cups all-purpose flour
- 3 cups chicken stock (I use low sodium canned chicken broth, but you can also make the stock right from the chicken that you poach)
- 1/2 cup coarsely chopped onion
- 1 cup sliced carrot
- 1 cup sliced leek (in a pinch, I have used a white onion and it works fine too)
- 1 1/2 cups quartered mushrooms
- 2 teaspoons baking powder
- 1/4 cup finely chopped fresh parsley
- 1/2 teaspoon poultry seasoning
- 1/2 cup nonfat milk
Banoffee Pie

Instructions If using sweetened condensed milk Remove the label from the can
- 1 graham cracker crust
- 1 can (approx 14oz) sweetened condensed milk (or of dulce de leche, see note)
- 3 bananas, sliced

In a large pot, heat oil over medium-high heat
- 1 tablespoon Vegetable Oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 3 stalks celery, chopped
- 1/4 cup All Purpose Flour
- 32 ounces Chicken Broth
- 1 bay leaf
- 12 ounces Turkey Gravy*
- Salt, to taste
- Black Pepper, to taste
- 2 1/2 cups leftover cooked chicken, shredded
- 2 7.5-ounce packages Buttermilk Biscuits, quartered
