Skillet Raspberry Crumb Bars ("Skookie")

This dessert Skillet Cookie (Skookie) is very easy to make, as well as versatile
- FILLING:
- 4 cup fresh raspberries, (you can use frozen raspberries, unthawed)
- 1 tablespoon corn starch (Note, I prefer Clearjel, that I buy at King Artur Flour, online)
- CRUST AND TOPPING:
- 3 cups all purpose flour
- 1 1/2 cups sugar, divided
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup cold butter, cut into small pieces (tip: grate the cold butter, which is easier to work with)
- 1 egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 teaspoon pure almond extract
- GLAZE:
- 1/2 cup confectioners sugar
- 1 tablespoon (14-g) milk (or more as needed)
- 1 to 3 drops fresh lemon juice

Combine yeast, sugar and water in a large bowl
- 1-1/2 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 1/4 cup lukewarm watre
- 3 cups all-purpose flour
- 3-1/2 tablespoons unsalted butter
- 2 tablespoons light brown sugar
- 1/4 teaspoon salt
- 1 cup pureed pumpkin
- 1 egg, lightly beaten
- 1/4 cup maple syrup
- 1/4 teaspoon ground cinnamon
- 1 cup whole wheat flour
Caramel Pudding

In a small bowl, whisk 1/2 cup of the milk with the cornstarch, vanilla and salt until smooth
- 1 quart 2-percent milk
- 1/4 cup plus 3 tablespoons cornstarch
- 2 teaspoons pure vanilla extract

Strawberry Shortcakes with Extra Creamy Cream Cheese Filling

I have made this recipe before, as a Shortcake with layers of freshly sliced strawberries
- SPONGE CAKE:
- 1 1/4 cups cake flour (5 ounces)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon table salt
- 1 cup sugar (7 ounces)
- 5 large eggs (2 whole and 3 separated), room temperature
- 6 tablespoons unsalted butter , melted and cooled slightly
- 2 tablespoons water
- 2 teaspoons vanilla extract
- STRAWBERRY FILLING:*
- 2 pounds fresh strawberries (medium or large, about 2 quarts), washed &dried
- 4 - 6 tablespoons sugar (to taste)
- 2 tablespoons Kirsch
- Pinch table salt
- 8 ounces cream cheese , room temperature
- 1/4 cup sugar
- 1/4 cup confectioner's sugar (this helps the whipped cream to stay a bit more stabilized)
- 1 teaspoon vanilla extract
- 1/8 teaspoon table salt
- 2 cups heavy cream
GREMOLATA:
