Roasted Cauliflower with Lemon and Anchovies (Sippity Sup)

Preheat oven to 425. Wash, dry, and remove any of the outer leaves from the cauliflower
- 1 head cauliflower
- 2 clv garlic, peeled and roughly chopped
- 6 anchovy fillets
- 1⁄2 c good quality extra-virgin olive oil
- 1⁄2 lemon juice and zest, separated
- salt and freshly ground black pepper, to taste
- 1⁄2 c seasoned breadcrumbs
- 1⁄2 c water

I recommend that anyone who wants to bake fresh bread, with minimal effort, buy this book
- 3 3 to cups lukewarm water (you can use cold water, but it will take the dough longer to rise. Just don’t use hot water or you may kill the yeast)
- 1.3 you use cake yeast you will need 1.3 ounces.
- 1 to 1 1/2 1 to 1 1/2 to tablespoons Morton’s Kosher Salt (adjust to suit your taste or eliminate it all together. Find more information here.)
- 6 1/2 6 1/2 1/2 cups (2-pounds) unbleached all-purpose flour (we tested the recipes with Gold Medal and Pillsbury flour. If you use King Arthur or other high protein flour check here.)

This recipe comes from "Artisan Bread in Five Minutes A Day"
- Whole wheat flour 5 1⁄2 cups
- All- purpose flour,unbleached 2 cups
- Granulated yeast* 11⁄2 tablespoons (2 packets)
- Kosher salt 1 tablespoon
- Vital wheat gluten 1⁄4 cup
- Lukewarm water 4 cups
- Cornmeal or parchment paper for the pizza peel
- 1 to 2 tablespoons of whole seed mixture for sprinkling on top crust: sesame, flaxseed, caraway, raw sunflower, poppy, and/or anise (optional)
Citrus Cured Salmon (Gravlax)

I don't eat much sushi, because I have a fear of eating raw fish
- 1 cup coarse salt
- 1/2 cup sugar
- 1 tablespoon orange zest, freshly grated
- 1 teaspoon lemon zest, freshly grated
- 1 teaspoon lime zest, freshly grated
- 2 tablespoons dried dill (optional but this is key for gravlax)
- 1 (2 to 3-pound) skin-on salmon fillet, pin bones removed and very thin pieces of flesh trimmed NOTE: buy quality and fresh salmon. I used one pound of salmon
Perfect Blender Béarnaise sauce

Béarnaise sauce is an "offshoot" of Hollandaise sauce
- 3 egg yolks, room temperature
- 1 1/2 sticks butter (don't use margarine or substitute!)
- 1/4 teaspoon salt
- Pinch of pepper (I used white pepper)
- 1 tablespoon fresh lemon juice
- 2 dashes hot sauce (optional, I omitted)
- 1 tablespoon fresh tarragon, chopped
- 3 tablespoons white wine vinegar
Colcannon

Place potatoes in a large pot with enough water to cover
- 3 pounds red potatoes, quartered
- 1/2 pound bacon, cut into small pieces, fried
- 1/2 large head savoy cabbage, cored, shredded
- 4 green onions, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup butter (1 stick)
- 1/2 cup low-fat sour cream
- 1/2 to 3/4 cup half and half, as needed
- salt and fresh ground black pepper, to taste
Potato, Sausage & Cheese Breakfast Casserole

When coworkers bring a breakfast potato casserole, I love them
- HOMEMADE CREAM OF CHICKEN SOUP:
- 4 cups frozen hash browns (about half of a large bag) NOTE: I let them sit in a large bowl for about 30 minutes and that worked fine.
- 4 to 5 Italian sausages, casings removed (I buy mild and add red pepper flakes to it)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup butter, melted (optional, see note)
- 11 ounces of homemade cream of chicken soup (can substitute canned, if you prefer.)
- 1 cup sour cream (I used lite, because it's what I had)
- 1 small onion, chopped
- 1/2 bell pepper, chopped (I used red bell pepper)
- 1 garlic clove, minced
- 2 teaspoons dried thyme (optional)
- 2 cups grated cheddar cheese (I used a combo of sharp cheddar and Monterey Jack cheese)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 1/2 cups chicken broth, divided as 2 cups and 1/2 cup (canned or boxed is fine, but homemade works, too)
- 1 1/2 cups milk (I used whole milk)
- 3/4 cup flour
- 1 tablespoon seasoning mix (or on your own, 1/2 teaspoon. onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon black pepper, 1 teaspoon salt)
Frozen Strawberry Daiquiri

Directions In a blender combine rum, Triple Sec, lime juice, sugar, ice and strawberries
- 4 oz light rum
- 2 oz Triple Sec
- 2 tbsp fresh lime juice (about 3 limes)
- 1/4 cupsugar
- 3 cups ice
- 18 fresh strawberries, stems removed
Chewy Oatmeal Crispies, 2 ways

I found this recipe, many years ago, in a Country Cooking published cookbook
- NOTE:
- 1 cup shortening**
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- I prefer to use half butter and half shortening. All butter makes the cookies burn on the edges and you don't get the right texture.
