Buttermilk Onion Rings, Kicked Up!

While visiting Texas, this summer, we had the most delicious thick-cut onion rings
- 2 medium sweet onions (like Vidalia orTexas 1015 sweet onions, cut into 1/4-inch rings)
- 1 1/2 cups buttermilk
- 2 cups all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon chipotle powder or chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon ground cumin
- Oil for frying

- For the Cake:
- 2 ounces unsweetened chocolate, coarsely chopped
- 2 ounces bittersweet chocolate, coarsely chopped
- 1-3/4 cups unbleached all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 sticks butter (room temperature)
- 1-1/2 cups sugar
- 3 large eggs (room temperature)
- 1 cup sour cream
- 1 Tablespoon pure vanilla extract
- 1/2 cup miniature chocolate chips (optional, I omitted them)
- Grated zest of 1 large navel orange
- 1/4 teaspoon pure orange oil (optional)

- 1/2 cup plus 2 tablespoons unsalted butter, 5-ounces
- 1 1/2 cups sugar, 10-ounces
- 6 large egg whites, about 1 1/4 cups; packaged liquid egg whites work fine, too
- 1 1/2 cups buttermilk, at room temperature, 12-ounces
- 1 1/2 teaspoons vanilla extract
- 4 drops coconut flavoring
- LEMON CURD, OPTIONAL:
- 3/4 cup fresh lemon juice
- 1 tablespoon grated lemon zest
- 3/4 cup sugar
- 3 eggs
