Molasses Coffee Marinated Pork Chops

Directions Place all of the ingredients into a 1-gallon zip top bag, seal, and shake to combine
- 1 cup cool strong coffee
- 6 ounces molasses, by weight
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground ginger
- 6 to 8 sprigs fresh thyme
- 1/2 teaspoon freshly ground black pepper
- 4 (6 to 8-ounce) bone-in, 1-inch thick pork chops
Gingerbread Cookies

Preheat oven to 350 degrees F
- 1 package sugar cookie mix
- 1 egg
- 1/2 cup all-purpose flour
- 1/4 cup melted butter
- 2 tablespoons pumpkin pie spice
- 1/2 teaspoon ground ginger
- 1/4 cup dark molasses
- 1 teaspoon vanilla extract
- Royal Icing
- 2 large egg whites or 5 tablespoons meringue powder
- 2 teaspoons fresh lemon juice or 1 teaspoon vanilla extract
- 3 cups confectioners' sugar, sifted
- Food coloring, if desired
Jalapeño Popper Dip

Preheat oven to 350. Combine all of the ingredients into a medium bowl
- Topping:
- 6-8 slices of bacon, diced and cooked crispy
- 2 8-oz packages of cream cheese, soft
- 1 cup of mayonnaise
- 4-6 jalapeno's, chopped and deseeded. The seeds will make it fiery hot.
- 1 cup of cheddar cheese, shredded
- 1/2 cup of mozzarella cheese, shredded
- 1/4 cup diced green onion
- 1 cup of crushed crackers ( I used Ritz)
- 1/2 cup parmesan cheese
- 1/2 stick of butter, melted
Chocolate Lasagna

1. Begin by crushing 36 Oreo cookies
- 1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
- 6 Tablespoon butter, melted
- 1- 8 ounce package cream cheese, softened
- 1/4 cup granulated sugar
- 2 Tablespoons cold milk
- 1- 12 ounce tub Cool Whip, divided
- 2 – 3.9 ounce packages Chocolate Instant Pudding.
- 3 1/4 cups cold milk
- 1 and 1/2 cups mini chocolate chips
Sweet Apple Sausage and Potato Salad

- 1 bunch watercress, tough stems removed

In a mortar and pestle or bowl, mash together the garlic, jalapeno, cilantro, salt, and pepper to make a paste
- 4 garlic cloves, minced
- 1 jalapeno, minced
- 1 large handful fresh cilantro leaves, finely chopped
- Kosher salt and freshly ground black pepper
- 2 limes, juiced
- 1 orange, juiced
- 2 tablespoons white vinegar
- 1/2 cup olive oil
Kung Pao Chicken

Combine Chicken pieces with soy sauce, vinegar, white pepper and 2 tablespoons of cornstarch
- Sauce:
- 1 Lb Chicken Breast, cut into 1/2 inch to 3/4 inch pieces
- 2 Tbls Corn starch, for coating the chicken pieces
- 1/2 Tsp White Ground pepper
- 1 Tbls Rice Wine Vinegar
- 1 Tbl Soy sauce
- 3 Scallions, whites finely minced, and greens finely sliced, reserved separately
- 1/2 cup fried fresh peanuts or roasted unsalted peanuts
- 3 Cloves fresh Garlic, minced
- 1 Tbl Fresh Ginger, minced
- 5 to 6 hot Chinese dry chili peppers
- Vegetable oil for frying the chicken pieces
- 1 small Green Bell Pepper, diced
- 1 small Red Bell Pepper, diced (optional)
- 4 to5 White Button mushrooms, sliced (optional)
- 2 Tbls soy sauce
- 2 Tbls Chinese cooking wine
- 1 Tbl Cornstarch
- 1 Tsp Asian chili-garlic paste, (optional)
- 2 Tbls Hoisin Sauce
- 1 Tsp Sesame oil
- 1/4 Cup Chicken stock
- 1 Tsp Sugar
Buttermilk Garlic and Chive Mashed Potatoes

1. In a large pot, bring salted to a boil
- Kosher salt
- 2 lbs Yukon potatoes, peeled cut into 3/4 inch cubes
- 1/4 cup milk
- 1 garlic clove, minced
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup buttermilk
- 2 tablespoons chives, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Chicken Lo Mein

1. Cook the noodles according to the package directions until just tender
- 1/2 pound angel hair pasta
- 3 tablespoons hoisin sauce
- 1/4 cup chicken broth
- 2 tablespoons soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon finely chopped fresh ginger
- 1 medium onion, halved lengthwise and thinly sliced
- 4 to 5 shiitake mushroom caps, thinly sliced
- 1/2 cup thinly sliced carrots
- 1 cup broccoli florets
- 1 cup sugar snap pea pods, halved
- 1 (15-ounce) can Chinese baby corn, drained and cut in thirds
- 1 to 1 1/4 pounds skinless, boneless chicken breast, cut into bite-size strips
